Homemade Taco Seasoning Mix

We really enjoyed this seasoning mix. I much prefer it over those pre-made packets. A lot cheaper to make and no scary "filler" ingredients. FYI - this recipe seasoned one pound of meat perfectly. Thank you!

Vegan Chocolate Cake

WOW! I have never baked anything vegan before. I am a new vegetarian and have been dabbling in vegan options. I love to bake with "traditional" ingredients and was not sure how this recipe would turn out. I was pleasantly surprised. I did add about 1/3 cup of miniature chocolate chips (not vegan, but I'm trying to work through what I've left in my cabinet). These were good right out of the oven, but as previous reviewers stated they really were better the next day! I can't wait to make these again. Delicious!

Glazed Almond Bundt Cake

Wow! It had a nice buttery almond taste to it. Did not make the icing, but we served the slices with some coconut pudding, sliced strawberries, and sliced almonds. Very nice texture, not too crumbly as other reviewers have stated. Would make a good addition to a gift platter, sliced up with other breads. Next time I think I will make two loaves as opposed to the bundt cake. 2nd day and it is just as good!

Fluffy Biscuits

These were really good biscuits. I even made a mistake by adding in 3/4 cup milk instead of 2/3 cup milk. I just added more flour and they still came out great. I figure any recipe I can goof on that still comes out nicely deserves every star. The dough was VERY sticky, though. It did make approximately 12 decent sized biscuits.

Chef John's Shepherd's Pie

Very tasty....good base recipe. You can really use this as a guide and use what you've got on hand. I used sliced leeks, corn, green beans, carrots and celery for the veggies, which I sautéed in about a tablespoon of butter. Added about one tablespoon of Worcestershire sauce and 2 t. Chopped fresh parsley with broth mixture. Also added white pepper and two tablespoons butter to potato topping and eliminated cheddar. The whole family enjoyed this. Thanks so much!

Slow Cooker Texas Pulled Pork

Delicious. Made just as recipe was written and it was fantastic. Tasted even better the next day. Only used a 2.8lb cut of meat and got about 10 large sandwiches. Pulled pork sandwiches are only as good as the BBQ sauce you top them with so splurge and buy a good one!

Cuban Ropa Vieja

This was very tasty! I didn't have any issues with the tomato sauce being too thin as others stated. IMO you need the extra sauce as you tradtionally serve it over white rice. Next time, I plan on adding some green olives and bay leaf. This recipe was very generous and I imagine leftovers would freeze nicely. If you drain some of the extra sauce, it also makes awesome sandwiches!

The Perfect Cinnamon Roll Icing

Key Lime Cake II

This was a fabulous cake. Due to what I had onhand, I used lemons vs. key limes. This cake was wonderful and very pretty cake slices. I did wait to glaze the cake until it was all the way cool. Family loved it!

Johnson Family Cinnamon Rolls

Wow! These were awesome. Followed suggestion of other reviewers and doubled the filling. These were a-m-a-z-i-n-g. Took a long time to make, but totally worth it! Leftover rolls reheated nicely....

Orange BBQ Chicken

This was really yummy. I loved the sweet/savory thing it had going on with the BBQ sauce and jam. I did substitute orange marmalad since that's what I had in the fridge. I also browned the breasts in a skillet prior to baking, adding a little bit of chicken stock to deglaze the pan and mixed that in with the sauces. Based at 350 for 30 minutes and the chicken came out wonderfully juicy. Used boneless, skinless chicken breasts. Will make again!

Zesty Zucchini and Squash

I made this recipe with a few tweaks. First, I sauteed the onions separately until they got nice and soft. Secondly, I added about 1/2 tsp. cumin and one can of drained and rinsed pinto beans with the remaining ingredients. I served it over a baked potato with a bit of lowfat sour cream. Delicious, filling, and nutritious meal that's also easy on the wallet. Thank you!

"Knock-off" honey bran muffins - without the guilt!

Tasty! I did add about 2 T wheat germ and used all whole wheat flour. Added 1 tsp ground cinnamon and about 1/4 tsp each of ginger and nutmeg. Didn't have blueberries, but I really didn't miss them. After baking, I poked holes on the top of the muffins with a fork and very lightly drizzled them with honey. Delicious! tasted like these honey bran muffins I get at a chain restaurant except these are MUCH healthier. Thanks for the recipe!
