Orange BBQ Chicken

Reviewed: Aug. 11, 2011
This was really yummy. I loved the sweet/savory thing it had going on with the BBQ sauce and jam. I did substitute orange marmalad since that's what I had in the fridge. I also browned the breasts in a skillet prior to baking, adding a little bit of chicken stock to deglaze the pan and mixed that in with the sauces. Based at 350 for 30 minutes and the chicken came out wonderfully juicy. Used boneless, skinless chicken breasts. Will make again!

Soft Christmas Cookies

Reviewed: Aug. 1, 2011
These really were perfect for cut-out cookies. I had no problem rolling out the dough and they kept their shape nicely. The texture was spot on. However, by themselves they aren't stellar in the taste department and definately benefit from an icing of some sort. Regardless, I will be using this recipe alot. I may add a 1/2 tsp almond extract or some orange zest or something to spruce them up. Thanks for sharing!

"Knock-off" honey bran muffins - without the guilt!

Reviewed: Aug. 1, 2011
Tasty! I did add about 2 T wheat germ and used all whole wheat flour. Added 1 tsp ground cinnamon and about 1/4 tsp each of ginger and nutmeg. Didn't have blueberries, but I really didn't miss them. After baking, I poked holes on the top of the muffins with a fork and very lightly drizzled them with honey. Delicious! tasted like these honey bran muffins I get at a chain restaurant except these are MUCH healthier. Thanks for the recipe!

Slow Cooker Chicken Cacciatore

Reviewed: Jul. 29, 2011
This was very soupy. I read others' recommendations to add tomato paste, but unfortunately I had none in the cupboard. Luckily, I had an extra jar of spaghetti sauce and mixed that in. Quick prep time, so even though its not my favorite, this will go into rotation, but not without tomato paste next time!

Peachy Keen Kuchen

Reviewed: Jul. 24, 2011
This was very good! I did use butter as that is what I had on hand. I also followed the suggestions and used almond extract. I'm so glad I did - I think the almond flavor really made this cake special. I also added an extra sprinkling of cinnamon to the topping and used turbinado sugar in lieu of the granulated sugar for the topping. Thanks! Very nice with coffee and not overly sweet. You could serve with breakfast!

Fluffy Biscuits

Reviewed: Jul. 16, 2011
These were really good biscuits. I even made a mistake by adding in 3/4 cup milk instead of 2/3 cup milk. I just added more flour and they still came out great. I figure any recipe I can goof on that still comes out nicely deserves every star. The dough was VERY sticky, though. It did make approximately 12 decent sized biscuits.

Sy's Challah

This bread was pretty good and very appealing to the eye. Be forewarned it makes two healthy sized loaves. French toast the next day was out of this world!

My Kid's Favorite Pork Chops

Reviewed: Jul. 14, 2011
These were really dry. Recipe should state the thickness of the chops as this would definately affect the cooking time. I like to stick to original recipes the first go round. Good thing I have lots of BBQ sauce. I will try again - next time less steak seasoning (or just using garlic powder, salt and pepper) and will halve the cooking time.

Brown Sugar Instant Oatmeal Muffins

Reviewed: Jul. 10, 2011
Thanks for the recipe, but I found these to be a little gummy. I'm wondering if its the brand of instant oatmeal I used? Anyhow, not sure I will try these again but if I do I will have to make some adjustments. (More maple, vanilla, or something) Thse were just missing something.

Slow Cooker Texas Pulled Pork

Reviewed: Jul. 5, 2011
Delicious. Made just as recipe was written and it was fantastic. Tasted even better the next day. Only used a 2.8lb cut of meat and got about 10 large sandwiches. Pulled pork sandwiches are only as good as the BBQ sauce you top them with so splurge and buy a good one!

Fluffy Pancakes

Reviewed: Jul. 3, 2011
I doubled the batch and these made a ton! Froze half of what I made. The only recommendation I would make is to add 1/2 tsp cinnamon and 1 tsp vanilla per batch as they may be a little too plain without them. Will be making these again. Family ate them up. Thanks!

Cuban Ropa Vieja

Reviewed: Jul. 3, 2011
This was very tasty! I didn't have any issues with the tomato sauce being too thin as others stated. IMO you need the extra sauce as you tradtionally serve it over white rice. Next time, I plan on adding some green olives and bay leaf. This recipe was very generous and I imagine leftovers would freeze nicely. If you drain some of the extra sauce, it also makes awesome sandwiches!

Banana Brown Sugar Pancakes

Reviewed: Jun. 26, 2011
Really tasty. Used plain oatmeal packet as that is what I had onhand. We enjoyed these, thanks! Since I used plain oatmeal, I did add 1 tsp cinnamon and subbed 1/2 the sugar with brown sugar.

Wow! These were awesome. Followed suggestion of other reviewers and doubled the filling. These were a-m-a-z-i-n-g. Took a long time to make, but totally worth it! Leftover rolls reheated nicely....

Carroty Rice

Pretty good base recipe. I added shallot, parsley, and a squeeze of lemon juice. Served with chicken and family enjoyed it. I imagine it would pair also with fish very nicely.
