Tasty Tender Pork Tenderloin

Reviewed: Apr. 22, 2015
Just made this for the 2nd time and loved it just as much this time as last time. I made a couple changes to try to lower the calorie count on it. I only used a tablespoon of oil, no flour (browned the pork without it), cut the dressing to 1/2 cup and the honey to 1/4 cup. It doesn't make as much sauce but it makes enough to make the meat very moist and enough to give everyone a couple->three spoonfuls! My husband loved it and the guests we served tonight loved it too. They even asked for the recipe. A keeper for sure!

Pecan Praline Cookies

Reviewed: Oct. 16, 2014
OMGoodness! These were amazing. Served them tonight at a dinner party and they disappeared. I followed the suggestion of other reviewers and 1) Lay the graham crackers flat in the pan, shave the edges with a sharp knife if needed. 2) Add the cream of tartar to the brown sugar and mix before adding the butter. 3) Stir the brown sugar and butter continually until it just comes to a boil. 4) Pour slowly over the crackers and spread to the edges with a spatula. 5) Let cool on the pan for about 5-10 minutes and remove to parchment paper or wax paper to continue cooling.

Best Ever Banana Bread

Reviewed: Oct. 14, 2014
Yup, definitley lives up to it's name. I was concerned because the batter practically filled the loaf pan but it rose just above the top of the pan and came out very moist and very flavorful. I followed other reviewers advice and used a little more than a cup of mashed bananas, 1/2 cup of brown sugar and 1 cup of white sugar, added vanilla, and cinnamon. This will be my go to banana bread recipe from now on!

Chocolate Fudge Cookies

Reviewed: Jul. 4, 2012
These were great and so easy to make!! I added just a bit less oil then a half cup because of the reviews saying they were too oily and also increased the cooking time to 14 minutes and they were perfect. I also added toffee bits instead of chocolate chips but these would also be good with pecans or walnuts and white or chocolate chips. I will definitely be making these again.

Chicken In Basil Cream

Reviewed: Jan. 16, 2012
Oh my goodness! This was amazing! I made it as the recipe called for but added about a 1/4 cup of finely chopped pecans to the breadcrumbs. This would be a great dish to serve guests ... very elegant.

The Best Parmesan Chicken Bake

Reviewed: Jan. 12, 2012
I made this for dinner tonight and it was very good. I should have read the reviews before cooking though. When I took it out of the oven after 35 minutes, the top was very brown but the minute I put the chicken on the plate, I could tell it was not done. I covered the dish with foil and put it back in the oven for 15 more minutes. The next time I make it I will either slice the breasts thinner or use tenders as others have recommended. Also, I think I will crunch up the croutons a little. I used large croutons and they got very crunchy. I think the type of sauce you use makes all the difference in the taste - be sure it is a sauce that you and your family like. All in all, it is a wonderful recipe and I will definitely make it again!
