Shrimp Scampi I

OK, gang. I haven't left a review in a year or two, but had to on this one. I'd cut the pasta amount in half and either eliminate the bread crumbs all together or cut it down to a 1/4 or 1/3 cup. I also tried Panko instead of bread crumbs. They turned to a white mush. It was disgusting looking. There also was barely any sauce. What a waste of time and ingredients.

Peanut Butter Cup Brownies

People loved this. What a simple recipe. Made it just as written. Thanks for an easy dessert that I'll make again. I bet they'd be good warm with some vanilla ice cream on them. I'll try it that way next.

Barbecued Shredded Beef

This was pretty good. I doubled the meat, kept it at 2 beers and ended up using about 3 bottles of BBQ sauce. I cooked it all in the crockpot for about 10 hours on low.

Rich and Creamy Tomato Basil Soup

I didn't peel the tomatoes. There was a little too much basil in it. Could be because I doubled the recipe and used about 22 leaves. We all liked it though. I didn't like how it reheated the next day. It became very oily. I'll try again with less basil.

Chicken and Artichokes

Sorry, but none of us cared for this one. I did as the below reviewer and just simmered on the stove top. It was one of the most bland dishes I've ever made. Are the artichokes supposed to be marinated? It was edible, but won't make again.

Baklava

My first attempt at Baklava. It was very easy to make, but it was time consuming. I thought it tasted wonderful. My co-workers demolished it. Next time, I'd pour on more sauce. I like it dripping in goo!

Molten Chocolate Cakes With Sugar-Coated Raspberries

Very easy and very tasty. Didn't have the raspberries, so we topped with some whipped cream instead. Next time I'll do a raspberry sauce with the whipped cream. Yum!

Mexican Chicken Corn Chowder

I'll give this one 3 stars because half the family liked it while the other half didn't. It tasted really sweet to me. I'm assuming because of the creamed corn. I had a ton of rice left from another recipe that we didn't care for, so I added it to the chowder to make it a little thicker. That helped some. If I make again, I think I'll just use regular corn.

Green Chile and Rice Casserole

Oh, we all hated this one. Not sure what happened. I didn't find a 6 oz. rice package so I bought a box and followed the directions for 8 servings. Could have been too much rice. The recipe also calls for 16 oz of cheese. One 8 oz package of shredded cheese is 2 cups. Does the recipe really want 4 cups? I only used 2. It was really, really dry. Sorry.

Mexican Turkey Burgers with Pico de Gallo

The whole family loved this. I didn't have coriander, but they still tasted great. Next time, I'll buy some coriander to go with it. We topped them with cheese, sour cream and salsa.
