Caramels

Reviewed: Dec. 26, 2013
Very easy and delicious. I live very close to sea level and 250F was perfect for a result of soft, chewy candy. I took my time bringing the candy to temp by starting on low heat and gradually increasing to just over medium. Took approximately an hour and a half.

Real Hummus

Reviewed: Apr. 6, 2013
I tried this as written and it was just OK. After reading several of the other user's reviews, I decided to make the following changes: - Nuke the chickpeas in the microwave for three minutes. - Pop them out of the casing by simply squeezing the pea slightly between two fingers. (this is a little bit time consuming - took all of 10 minutes or so - but was WELL worth it. The consistency is MUCH smoother. - Add a bit of cumin. - Cut back on the lemon juice to half.

Meatball Nirvana

Reviewed: Jan. 26, 2013
These meatballs were highly over-seasoned and had way too much bread crumb. It took over the taste of the meat completely. . I think the additions to the meat could be cut back by half.

Seven Layer Taco Dip

Reviewed: Jan. 26, 2013
Not a good taco dip recipe. It wants to be a salad but has a multiple-personality disorder. No one ate this at the party I took it to. I followed the recipe exactly. The taco spices should NOT be mixed with the beans as it makes them too salty and the spices taste raw. Better to mix them with the sour cream mixture. Also, the lettuce and green peppers had no business being there. The green peppers took away from the over-all dish and the lettuce just ended up being watery and wilted. I ended up taking the entire dish home and trying to eat it throughout the week as a chicken taco salad just to not waste it all. I will not be making this again.

Buffalo Chicken Dip

Reviewed: Jan. 13, 2013
Very good recipe. Went over very well at the gathering I took it to, so much so that I have been elected to make it every time! I used Frank's Red Hot, store brand cream cheese, Hidden Valley ranch, Sargento off-the-block shredded mild cheddar, and Swanson canned chicken breast meat (Not chunk. I only wanted whole pieces of white breast meat. Although I am extremely picky with meat and the thought of using canned chicken grossed me out, I would use this again and not even think about cooking my own chicken. Too much work and the texture of the canned chicken was perfect for dip.) The only variation that I made was dumping the entire bag cheese in. I wish I had just stuck to the amount listed in the recipe because it altered the texture and made it way to thick for my liking. Next time I will be sticking to the recipe as written.

Lazygirl's Ground Turkey Stroganoff

Reviewed: Oct. 27, 2012
Good recipe, very much like a homemade hamburger helper. Very easy so it is great for a quick weekday meal. I used ground chicken which came out very tender. I also added minced garlic while cooking it and use fresh chopped onions instead of dried. I added a dollop of sour cream to the finished product along with a few chopped green onions to pretty it up. Will make again.

Moist, sweet, delicious muffins. I will definitely use this recipe whenever I have over-ripe bananas.

Jamaican Beef Patties

Nice recipe. I have used it several times. I like to add raisins to my beef mixture for a touch of that sweet element to all of the savory-ness.

Deviled Eggs II

Reviewed: Oct. 14, 2012
Near perfect recipe in my opinon. I added a dash of hot sauce since I don't consider the eggs "deviled" unless they are a little bit spicy.

Grilled Pork Loin Chops

Reviewed: Oct. 14, 2012
Great recipe! I used mine for pork chops which I cooked ahead for sandwiches. I ended up slicing the chops and dunking the slices into the left-over marinade before reheating. Delicious!

Cowboy Cookie Mix in a Jar

Reviewed: Oct. 14, 2012
Wonderful! I used this recipe last year as Christmas gifts. Everyone loved them and I will be using again this year. Note: It definitely took a little bit of finess to pack the ingredients into the jar tight enough to fit it all in.

Simple Scones

Reviewed: Oct. 14, 2012
I loved this recipe! I made mine with dried blueberries. I think I will try fresh blueberries next time for added flavor. Also, I may not have rolled my dough thin enough because it could have used closer to 20 minutes. However, the slightly underdone dough worked out nicely for reheating in the oven the next day.
