Apricot Chicken Provencal

Excellent! As some others did, I sauteed half an onion in the pan then deglazed with a little white wine before adding the apricot and preserves. When I put the baked chicken back in the pan I included the juices. This was a really incredible meal which went nicely with Freekeh. Thanks for sharing.

Cinnamon Raisin Bread I

This is great! I used coconut and wheat flours because they were all I had (about six cups). Mine didn't rise, but I'm sure it was my fault. Still good. Thanks!

Lentils with Chorizo

Excellent recipe, thanks! I made a couple of very minor changes. Cooked the lentils in homemade chicken broth, and added some carrots and mushrooms to the veggie mixture. We used this to make burritos and tacos.

Potato, Bacon, and Corn Chowder

This was so good. Replaced some milk with broth and deglazed the veggie pan and added it to the chowder so I wouldn't waste all those good juices. Thanks for sharing!

Chef John's Chicken and Mushrooms

We looooved this! I added a half an onion to the mushrooms in the pan, and found that when the chicken was done cooking the mushrooms were perfectly flavored, no need to make the sauce. I also used a combination of butter and coconut oil which added great flavor. Thanks!

Country Pound Cake

This cake is so very good. Dense, but super light, great flavor. I used 3/4 cup butter, 3/4 cup coconut oil. Also added the zest and juice of two lemons, and a lemon glaze. Thanks for sharing!

Uncle White's Bread Machine Rolls

These are incredibly delicious. We don't have a bread machine so I made these with my kitchenaid mixer. I mixed all the dry ingredients in the bowl with the egg yolk, while the yeast proofed in the warm milk with a tablespoon of sugar. (I doubled the amount of sugar in the recipe to make them a little sweeter). Then I added the milk/yeast mixture to the bowl and mixed it all together, adding the oil right at the end. I kneaded the dough by hand, then let it rise in the oven with the light on for a couple of hours. Baked for 20 minutes and they were perfect. Thanks for sharing!
