I've got to admit, even after reading all the rave reviews, I was skeptical up until the time i took my first bite... It's really good! It's simple but it has lots of flavor. I used all fresh ingredients and followed the recipe as is. Freshly grated parmesan on top is a must.

Grilled Chicken Thighs Tandoori

This recipe is the bomb! I took this to a bbq potluck and it stole the show over even the rosemary lamb chops and carne asada. I didn't even bother to wipe off the marinade and spray with olive oil and it was fine on the grill. However i did add just a touch of canola oil to the marinade. This will be made many times in the near future.

Slow Cooker Carnitas

I must agree, this was so easy and SO Delicious!! I used a slightly larger roast and I tripled spices as suggested except for the cinnamon. I did not have any bay leaves, and dont think it mattered. however next time i will add more cinnamon, I liked the flavor of it. i threw in a quartered onion, orange and jalapeno half way thru cooking. Cut my roast in 3 chunks to fit in the crock pot and it was ready a few hours early. Leftovers were amazing and I cant wait to make this again. SO GOOD!

Asparagus with Blue Cheese Sauce

This sauce is to die for. I've already made it twice this week, first for the asparagus and then again for bleu cheese bacon burgers and also put some on my roasted potatoes. The second time I made it in the microwave and used cream instead of the canned milk. this recipe is very flexible and very yummy.

Jalapeno Popper Spread

This was good. I got lots of compliments and several people asked for the recipe. I wasn't crazy over it, but it was really good. I would make it again. Especially considering how EASY it is.

Crispy Herb Baked Chicken

Whit's Chicken Enchiladas

These are OMG good! I did make the following changes: I used rotisserie chicken, added 1/4 pkg of chicken taco seasoning to the cream cheese mixture and mixed red enchilada sauce with the cream. I cooked 15 minutes covered in foil, then sprinkled with sliced olives and green onions and cooked uncovered for the last 15 minutes. Pretty sure they would be delicious even without the changes. This is my new Enchilada recipe. Can't wait to have them again.

Fettuccini Carbonara

This dish was quick and easy and tasted pretty good. The family raved about it. I added chicken which was good. Could have used a little more flavor and would definitely be better with a smaller pasta. Like another review said, the bacon and chicken didn't mix well with the fettuccini unless you sprinkle it on top after mixing the pasta with the sauce. Will probably make again.

Slow Cooker Sausage with Sauce

I did not expect much of this recipe but made it because it was easy and I thought the guys at work would like it... HOLY COW! This makes an absolutely delicious sausage sandwich on a hoagie with lots of shredded mozzerella. I added one clove of garlic and I only had 6 sausages, but other than that I followed the recipe exactly.

Stuffed Jalapenos III

YUM!!! I made these last night and my boyfriend and I loved them. We actually compared them to our current favorite appetizer. We will be having these all the time. So easy too. I used regular cream cheese instead of whipped and it worked fine. i also added a little bit of shredded cheese which did hold in the cream cheese, tiny bit of cayenne pepper and the bacon. I ended up turning it up to 425 degrees for the last 10 minutes to get the bacon crisp. Yum Yum! thank you!-UPDATE I have made these little yummy's at least 25 times now. Everyone loves them. We cook them on the BBQ on foil when we go camping all the time.

Chinese-Style Cheeseburgers
