Awesome Broccoli-Cheese Casserole
Awesome! I did 50/50 low-fat mayo and light sour cream and 2% cheese to reduce calories and it was still great. Next time I'll use more onions and perhaps some mushrooms. Also, I let it cool for a full 30 minutes before eating and I think that helped a lot, too.

Chili Rellenos Casserole
Wow is this awesome and easy. I made it almost exactly as written. Only change was using a 2% Mexican cheese blend and a couple more green peppers. Wife thought it had too much cheese (she's not big on cheese) so I'll use less cheese next time to try to cut down on the calories as well. But am I ever happy I found this recipe!

Mamma Rita's Eggs and Tomato Sauce
I used canned tomatoes and seasoned quite a bit with oregano and Italian seasoning. Added a little mozerella towards the end of cooking as well. Wow! The whole thing turned out muh tastier than I expected. I'm always looking for new ways to do my morning eggs and I'm excited to do this one again. I'm going to add some mushrooms next time, I think.
