Black Bean and Corn Quesadillas

I thought this would be a good make shift Monday night meal that would just get us by; but as it turns out my husband thinks it is one of the better recipes I have tried. An extra perk for adding this to our meal rotation is I usually have all the ingredients on hand. I rinsed the skillet I prepared the filling in and used it to to cook the quesadillas in same skillet .... so easy clean up in the kitchen. Nice to find a recipe that is this easy for me and also keeps "The Colonel" happy.

Beth's Spicy Oatmeal Raisin Cookies

These cookies were just OK. Not great. I followed the recipe exactly and was sorry I didn't use my stand by recipe. It was a nice experiment but I a going back to my recipe.

I should have known when it said 15 - 20 minutes ... there is no way it could get to 250 degrees in that short of time. ANYWAY you need to adjust time or temperature .... Not sure which. Think I will continue looking for a better recipe.

Easy Chicken Enchiladas

Love the fact that it is so easy, uses ingredients I usually have on hand. I had a busy day out, so made this is the morning and put it in the refrigerator. When I came home, popped it into the oven and by the time I changed clothes, and made a salad my enchiladas were ready to serve. My husband even likes them as leftovers. It's a keeper!

Sweet Dinner Rolls

This recipe has made me the "Bread Queen" for our family and neighbors. This was the beginning of my bread making, and it was so successful it gave me the confidence to venture out with bread making. Got a Zojirushi bread machine for Christmas and barely a day goes by that I am not making some form of bread. I now make all our bread, yes even the sandwich bread. My recent triumph was sourdough bread and it all started with this no fail recipe. Nothing smells sweeter or says 'welcome home" more than fresh bread baking. Go ahead get the addiction .... but KEEEP EXERCISING! LOL

Hash Brown Casserole II

Not low in calories ... but worth everyone! My family didn't realize I was trading the traditional family recipe until they tasted it .... Wow, couldn't get enough, my son-in-laws aren't free with compliments but when I see them go back for third helpings I know it's a hit.

Jay's Signature Pizza Crust

This was the most successful attempt I have made at homemade pizza. This recipe is now my official crust recipe ... still tweaking the sauce. I do love having my home smell like a Pizzareia when guest come through the door. Had a little difficulty transfering to the pizza stone, but next time I am going to put it on parchment paper for the transfer, cook it 5-10 minutes and then remove the paper for remaining cooking time.

Quick Yeast Rolls

Made these last night and doubled the recipe as suggested in another review. Placed extra rolls in the freezer and hoping I can just heat them up like you do Rhodes brown and serve. If so it will save me lots of money on my grocery bill. My gradkids LOVE bread.... they come by it honestly.

Wonderful Waffles

I was hesitant to try this since some of the reviews had commented it was a lot of work, HOWEVER I am so glad I decided to try it anyway. These waffles are worth any extra steps you have to take. Just do it ... you will be thrilled with the results.

World's Best Lasagna

Jamie's Cranberry Spinach Salad

This is a great EASY salad to make. I got rave reviews from the church group I shared it with. I did add toasted pumpkin seed, because I had them and thought they would compliment the flavors. I will probably include them from now on in the salad. This will definately make a return visit to our group, and my family table. GREAT!!!!

My family loved this recipe and my house smelled amazing while it was cooking. I will for sure make this again. One of the nicest things about this recipe is I had ALL the ingredients on hand. That is always a plus.
