Tender Tomato Chicken Breasts
This was quick, easy, and delicious! I fixed this last night changing up the vegetables a bit by using fresh squash, fresh tomatoes and a can of diced tomatoes as well, a can of Rotel, a medium onion, red bell peppers and 2 chicken breasts. Uesd the suggested seasonings, as well as some Italian seasoning. The vegetables were placed in the pan first on the bottom of a large skillet, seasoned well, then I laid the seasoned breasts on top of the veggies, then poured the can of tomatoes and Rotel over the breasts and veggies. I covered and simmered it on low for about an hour and served it over rice. It was marvelous! There are so may ways to change this up to make it your own.

Healthy Mexican Chicken Bake
I fixed this tonight for dinner. Reduced the serving size for 2 - it's just me and my husband. It took very little time, effort, and expense, but came out AMAZING. I've got plans to take this recipe and "run" with it by changing it up from time to time just to keep hubby on his toes!! We both really enjoyed it and cleaned our plates. I served it with fresh, steamed green beans and corn-on-the-cob. He thought I'd slaved hours on what he called a "gourmet meal." This is a keeper!

Quick and Easy Mexican Chicken
No muss, no fuss, and delicious!! I did not pan sear the breasts before putting into the over. I simply put them in the baking dish (seasoned) and pre-baked for 15 minutes. Then removed and put the salsa and cheese on them and then back in the oven for about 20 minutes, or until the cheese began to bubble and brown. It came out perfect! A few slices of jalapeno and a dollop of sour cream, with black beans and rice as a side dish, and we were good to go and very happy!! One cooking dish and two dinner plates to clean up ... in and out of the kitchen with a truly gourmet meal!! Me and my husband loved it!! Try it, you won't be disappointed!!
