Onion-Roasted Potatoes

These were fabulous! My husband loved them too. I used only 1/2 the oil called for to save calories and I covered them for 10 minutes, then the rest of the time uncovered. Perfect!!

Baked Potato Soup

This is a fabulous recipe. I doubled it and kept it warm in a crock pot. Instead of regular bacon, I used a good turkey bacon and put it back into the soup to make it easier to serve. I used less basil because of other reviews. The baked potatoes make it easier and more tasty. You can bake the potatoes the day before. I am used to changing recipes, but these are all the changes I made and it is wonderful. This recipe is a keeper.

Two Ingredient Pumpkin Cake

This is a wonderful recipe and so easy. I have made it several times and never the same way twice. I had a yellow cake mix and added pumpkin pie spices. I had no pumpkin, so I used sweet potato instead. I added some leftover apple butter and two eggs. I zested an orange and mixed it into a can of cream cheese icing. Yummmmm

German Apple Cake I

Wonderful recipe! I used only 1/2 cup of oil and added about 3/4 cup of homemade applesauce. It saved a ton of fat and it is perfect without the extra oil. I will make this again.

Spinach Quiche

This was absolutely wonderful. My very un-adventurous husband ate it up and asked for seconds. I made it without a crust by spraying the pie pan first and it came out perfectly. I had fresh spinach, so I blanched it muself and chopped it. I had fresh mushrooms too, so I sauteed them with the onions. I cut the butter down to 2 TBS, which was plenty. And I followed other advice that this was a large amount, so I made 2 pies instead of one. Really fabulous!!

White Bean Chicken Chili

I love this recipe. It is a great way to use leftover rotisserie chicken. You really can't go wrong once you put in the seasonings. I have added leftover salsa, extra chicken stock (I use homemade) salsa verde, fresh tomatillos, you name it, I have varied it and it is always scrumptious! I like it as a soupy consistancy and serve it with crushed corn chips or fried strips of corn tortillas. This is a winner

Goat Cheese Stuffed Tomatoes

This was wonderful! I Served them on a bed of field greens drizzled with olive oil and balsamic vinegar. Pretty presentation and very very easy and fast. (Wait until they are done cooking before you add the basil.)

Breaded Parmesan Chicken

very, very good. I did not have any stuffing mix, so I substituted panko bread crumbs and some extra seasonings including a bit of chicken bouillon. I served it with rice and salad and it was a big hit. The piece I have left over will be wonderful sliced and put on top of a salad.

Green Tomato Cake

this is delicious. Instead of the salt and rinsing, I zapped the tomatoes in a food processor and then drained the liquid off in a strainer. Then I measured 4 cups of pulp. I used just 1 1/2 cups of sugar. This is a winner!

Greek Style Potatoes

These potatoes were delicious! The flavor was very full, which is hard to get with potatoes sometimes. I used only 1/2 cup of water and cooked them uncovered at the end because I wanted them a bit brown. I know it is not the Greek way!!

Moist, Tender Spice Cake: Gingerbread Variation

I really did not care for the flavor of this cake. It did not taste like spice cake to me. I had intended to bring it to a ladie's function for the desert and I was glad I tried it ahead of time. I wanted it to be fabulous but it was not.

Ginger Pork

This is a great, quick recipe!! My entire family loved it. It is not overpowering with the ginger and is simply delicious. I used extra chicken broth and no water to give it extra flavor. This produced plenty of "gravy" for the rice that I served it with. This is a keeper

Grandmother's Buttermilk Cornbread
