Yummy Sweet Potato Casserole

Being from Texas we grew up on this! Using real butter and brown sugar give it a very rich yummy taste. Fattening but absolutely worth every bite! Especially if you only make it on Holidays. No fail recipe

Cabbage Beef Soup

Slow Cooker Cheesy Chicken and Tortillas

I made this tonight with a few changes to make due with what I had on hand. Used chicken boullion, made my own taco seasonings because I was out. Added beer for both flavor and tenderizing properties. Used chopped chillis, sour cream and used tortilla chips instead of soft ones. This absorbs excess soupiness and holds it together for easier cutting and serving.

Chicken Enchilada Casserole II

Used crushed dorritos to layer the bottom and used corn tortillas for the rest. For extra flavor I simmer chicken in some beer, chicken broth, juice of one lime, garlic, red pepper and a dash of chilli powder. The beer lends a wonderful taste (drain) and is a terrific tenderizer. The other seasonings make it pop when baked with casserole. Of course I use beer in most Tex Mex food thats calls for chicken. Wonderful blend of seasonings! I roasted two chickens and there was nit a bite left. The guests loved it, even asked for the recipe. Juicy and flavorful.

Six Can Chicken Tortilla Soup

This was simple and delish! I doubled the recipe, added juice from 2 limes, a cup of chunky salsa, garlic, chili powder, cumin, a dash of red pepper, 2 cups of instant rice (not only to absorb excess liquid but to make more filling) and topped with sliced avacodos, jack cheese and thin tortita strips. This Texas family loves it. Perfect. Thanks for sharing! I also save any left over chicken breasts, shred and freeze for this very soup. Also freezes great for on the go lunches.

I didnt have sherry so I used beer. Marinaded it for over 24 hours.. Placed on grill using the marinade as a sauce, brushing on chicken often. The flavor was beautiful and by far the moistest chicken recipe I have found on here. This is a keeper. Will make again

Best Bread Pudding with Vanilla Sauce

This reminds me of my Grandmas excellent bread pudding! So decadent, so Southern and so perfect.I didnt have raisins so I used canned diced peaches. Turned out fantastic! I give this a 10. Thank you for sharing!

Poor Man's Pepper Steak

My Grandmpther made this often with a couple of changes. We used a cup of beef broth and a cup of V-8 juice for a bolder more tomato based gravy. Also I cooked longer it longer. Makes a great family dish, especially when strapped for time and money.

Bacon Ranch Pasta Salad

I made this with traditional white penne pasta. I'm a very picky eater but loved this dish! Every single person asked me for the recipe and this was gone in an hour (I made 5 pounds for a BBQ). Truly simple and delicious!
