Thai Fried Rice with Pineapple and Chicken

I left out the peppers and fish sauce (didn't have any on hand) and thought it was really good. My only advice is to prep all the ingredients before starting to cook. Thanks for the great recipe, I'll be making this again!

Annie's Fruit Salsa and Cinnamon Chips

This is a fun desert to play around with. I especially love the cinnamon chips. I took the advice of a review and sprayed butter flavored Pam on the front and back of each tortilla, then poured the sugar/cinnamon mixture over. I also prefer to cut them into strips than wedges (just easier to eat without the chips being so wide). Also, please whatever you do, cut the sugar. I am a sugar lover, and decided to make the recipe with the sugar, but it was way toooooo sweet. I also didn't use any preserves because I didn't have any, it still tasted great. But be warned, it doesn't last well. Make it when you plan on using it. All in all, this is a great recipe. I am sure I will be using it many more times.

Six Threes Ice Cream

This is an extremely easy ice cream to make. I was just making it for myself and my husband, so I cut it in third just to make a smaller batch and the division was so easy. The one thing I didn't like was that it tasted too much like bananas to me, but maybe it was just my fruit? Anyways, it's quick and easy, and my husband liked it, but I'm not the biggest fan of bananas, maybe next time I'll try with other combinations of fruit.

Garden Pasta Salad

This is a great recipe. It's now my husband's favorite side-salad. I was a little pressed on time, so I took a shortcut by putting all the vegetables in my Ninja and processing it for a second or two. The salad didn't look as pretty as it could, but it saved me a lot of time. I also only used about half a bottle of Italian dressing and thought it was great. Additionally, I kept the Parmesan cheese on the side so people could add as they wanted it. We had leftovers for a few days and I think it tasted the best on day 3. Thanks for the recipe, it was easy and a great summer salad.

Pizza On The Grill I

I used the recipe for the dough, but it is really good. It takes a while to make, but if you have the time, I highly recommend making the dough from scratch. It's way better than frozen dough balls. My husband's favorite pizza is Hawaiian Barbecue, so we threw some barbecue sauce, sliced chicken breast, red onions, and pineapple chunks with some mozzarella cheese on top. One of the crusts got a little burnt, but with practice this will be an excellent and fun dinner choice. Even the slightly burnt pizza was delicious!

Taco Casserole

My husband loved this and even asked if he could take the leftovers to work for lunch the next day! Usually he just goes out to eat! I did make a few changes to the recipe after reading the reviews. I cooked the ground beef in the taco seasoning and onions like making tacos, and I used a can of diced tomatoes with chilies and peppers to add a little more flavor. I also added some black beans and olives to the top of the casserole with the tomatoes and onions to give it more of a nachos presentation. It looked superb and tasted amazing! Thanks for the recipe!

Chicken Enchiladas

I made this for dinner last night and my husband loved it. He said it was the best enchilada he's ever had. I did make a small change to the recipe. I shredded the chicken and added some taco seasoning to the meat/sour cream mixture like other reviews recommended. In a word - delicious!
