Thai Fried Rice with Pineapple and Chicken
I left out the peppers and fish sauce (didn't have any on hand) and thought it was really good. My only advice is to prep all the ingredients before starting to cook. Thanks for the great recipe, I'll be making this again!

Annie's Fruit Salsa and Cinnamon Chips
This is a fun desert to play around with. I especially love the cinnamon chips. I took the advice of a review and sprayed butter flavored Pam on the front and back of each tortilla, then poured the sugar/cinnamon mixture over. I also prefer to cut them into strips than wedges (just easier to eat without the chips being so wide). Also, please whatever you do, cut the sugar. I am a sugar lover, and decided to make the recipe with the sugar, but it was way toooooo sweet. I also didn't use any preserves because I didn't have any, it still tasted great. But be warned, it doesn't last well. Make it when you plan on using it. All in all, this is a great recipe. I am sure I will be using it many more times.

Six Threes Ice Cream
This is an extremely easy ice cream to make. I was just making it for myself and my husband, so I cut it in third just to make a smaller batch and the division was so easy. The one thing I didn't like was that it tasted too much like bananas to me, but maybe it was just my fruit? Anyways, it's quick and easy, and my husband liked it, but I'm not the biggest fan of bananas, maybe next time I'll try with other combinations of fruit.
