Beef or Chicken Enchiladas

This was liked by all. I didn't have any green chilies on hand so I just chopped up some green pepper to add colour. The kids probably preferred that anyways.

Naan

This was great for a day when you have the time to make fresh naan. I halved the recipe and wound up with 14 golf ball sized wads of dough. Next time I will leave out the garlic. As much as I love garlic, I would prefer my naan to be plain alongside my other tasty Indian dishes.

Spaghetti Squash I

Slow-Cooker Chicken Tortilla Soup

Made this when I was having a baking party and couldn't use the oven for dinner. I agree with other reviewers that only 2 cups of liquid is necessary. Thanks for a new tasty slow-cooker dish!

Lemon Bread

Spicy Beef Curry Stew for the Slow Cooker

This was a very tasty stew, but wasn't really a curry which is what I was looking for. Served it over rice to absorb all of the gooey goodness. Yum!

Creamy Broccoli Soup

I'm cooking for one this week so I'm trying to keep it simple and relatively healthy. Taking less than 20 minutes from chopping the veggies to scraping the bottom of the bowl, this fit the bill! The only change I made was to zap it with the immersion blender a bit before adding the cheese.

Slow Cooker Thai Pork with Rice

We're not the biggest fans of pork sholder but there was one taking up room in the freezer so I tried this out. I was impressed with how tasty it came out (with some cilantro sprinkled on top) and how easy it was to make!

Mexican Rice III

This recipe was tasty and easily adaptable for a rice cooker. I'll use more cumin next time and sautee it with the veggies right in the cooker before adding the rice. Also, I completely eliminated the boullion cube just to cut down on the salt.
