Asian Veggie Packets

I had left-over carrots and mushrooms and needed to do something with them that was Asian in influence since I was serving sweet & sour chicken (of sorts). Turned out that I didn't have the snow peas or brown sugar, but it was light & tasty anyways. It was also very easy to make. Since I made in my toaster oven while my chicken baked, I had to do it in two batches. For the second batch, I just mixed the wet ingredients with the dry until I could pop them in to bake. I actually think that marinating the veggies in the liquid made it a little more flavorful. I will do this next time.

Brownie Caramel Cheesecake

Because a friend saw this recipe and was set on me making this, I went ahead with it even though the reviews called for a lot of revisions and others were just negative reviews. I made the brownies as the package directed and reduced the time to about 8 minutes as to try to prevent burning. Unfortunately, the brownie still turned out burnt to a crisp. Also following reviews, I tweaked the cheesecake recipe part, which did turn out good. But really, I can't honestly say that this recipe as written works out.

Caroline's Chocolate Fudge Frosting

So sweet & yummy, but way too thin. I followed the suggestions and cut the milk in half and let it rest, but it was still way to thin. I literally poured it on my cake. Luckily I had made the cake in a 9x13 pan, so it wasn't really a problem, but it would have been a disaster for cupcakes or a layer cake. Because it was so yummy, I am going to attempt it once more and use even less milk.

Mom's Chocolate Cake

Delicious, so moist and easy. This was my first "from scratch" cake. Followed the recipe exactly. My cake did do the "rectangle shaped" thing in the center that some others mentioned, but the center never dropped and it was easily covered with frosting, so it wasn't really a drawback, just kind of weird.

Amazing Slow Cooker Chocolate Cake

I followed the recipe exactly, and I believe that it turned out how it was supposed to, I just didn't care for the texture. It was more like a warm bread pudding than a cake. Once it sat over night, it did firm up, but I still wasn't crazy about it.

A Good Barbeque Sauce

It's good and easy. I made it exactly according to the recipe, but upon tasting it I felt that it was just missing a little something. I adding a little lemon juice, Old Bay, Worcester Sauce & brown sugar as many reviews suggested. It was mild and sweet. I would have preferred it to have a bit more of a kick.

Erica's Delicious Slow Cooker Beef Roast

Very easy and good. The roast turned out so tender, it almost just fell apart. I followed some of the suggestions: added a can of french onion soup, dredged the meat in flour and sauteed the meat for only 2 minutes per side and added a little Worcestershire sauce and extra seasoning. It's mild tasting, so be sure to add a little extra seasoning if you like things with a little more taste.

Shepherd's Pie VI

Very good and relatively easy. I used the frozen mashed potatoes, which made it a little easier. I would increase the liquid just a little, so it is a little more moist. The last few minutes I turned on the broiler to make the top nice & crispy.

Magic Cookie Bars II

Very tasty & easy. It's a great recipe to take to potlucks & picnics. I took the suggestion of mixing the butter w/ the crumbs before putting in the pan, and I melted caramel and drizzled it over the chips and walnuts instead of using butterscotch chips.

Chicken and Gnocchi Soup

Very easy & tasty. As suggested by others, I added some spices to the soup while cooking, used fat free half and half and didn't add the cornstarch. The only thing is, it didn't thicken quite like I would have liked. I will definitely try it again, but make some adjustments to make it thicker.

Slow Cooker Lemon Garlic Chicken II

The only modifications I made was that I added capers and scallions, used an Italian herb blend as opposed to just oregano and I cooked it with the lemon. As others suggested I increased the liquid by deglazing the pan with 1/2 cup white cooking wine and 1 cup water. Although the chicken was very tender, it did have a bit of a bitter after-taste and the liquid was so bitter I didn't bother trying to thicken it in a gravy. Maybe it was because I threw the lemon in the crock pot-- but it just had a bad bitter taste. Be careful about how much lemon you use. I wish I would have heeded the warnings of others about this. Not sure if I'll try it again.

Mustard Chicken

DELICIOUS! And so easy to make!!! I used Dijon mustard and put some fresh pepper and Italian herbs on the chicken prior to coating them. Otherwise, I followed the directions. As I was eating it, I kept waiting for the mustard to be overpowering, but it wasn't. And like other reviews said, the crispy onions were amazing. I highly recommend!

Chicken Breasts in Caper Cream Sauce

This was a very easy and flavorful recipe. The minor adjustments I made: I coated the chicken in salt, pepper & an Italian herb mix and some shredded Romano cheese. After cooking the chicken, I deglazed the pan with half a cup of white cooking wine. I used light whipping cream and doubled the sauce like others suggested. To the cream I added the dill (I used leaves, couldn't find dill weed), freshly squeezed lemon (half) and the capers. After a few minutes, I reduced to simmer and put the chicken back in for about 15 minutes. The only problem I had was getting the chicken fully cooked-- they were thicker breasts and I ended up throwing them in the microwave for 2 minutes to get them up to temp. The sauce thicken nicely and it was so tasty. If you're not a fan of dill, you may want to reduce the amount, or only use 1 tsp. even if doubling the sauce.

Grilled Chicken with Herbs

Very easy marinade and tasty. It has a distinct balsamic taste; if you like the flavor, you'll love this recipe. The fresh herbs were a nice touch- great flavor. I don't have a grill, so I used a George Foreman, which didn't work so well-- the marinade burned (like it has a tendency to do on that "grill"). Next time I am going to bake it in the oven, including the marinade in the baking dish.

Sun-Dried Tomato Asparagus

This was great & so easy! I love sundried tomatoes, and they added a great zest to the asparagus. I also added some capers. One caution: it is easy to over cook, so watch them carefully. The suggested time made mine soggy-- still delicious, but not as crisp as I would have liked.

Onion Chicken in Balsamic Sauce

It was good, but the sauce didn't really thicken until after the left-overs were refrigerated. It also took a while to caramlize the onions. Don't get me wrong, it was good, but for as long as it took, I expected it to be a little better. I will probably make it again, but am more prepared for the prep & wait time.

Country Apple Dumplings

OH SO GOOD! I discovered a few tips: I used part brown sugar and found that it was best with dark brown sugar, and I used generic 7-up so that I didn't have the caffinee of Mountain Dew. Also, I rolled the apples in a little cinnamon & sugar before wrapping them. Although still tasty, it wasn't as good with light brown sugar & Fresca.

Spinach Stuffed Chicken Breast

It was a little messy to make (probably due to over stuffing the chicken), but very delicious and filling. Made the following tweaks based on previous suggestions: marinated in buttermilk and used a combo of mozzerella, feta & parm cheese instead of cheddar). Also, I used fresh spinach and prepared it and the garlic as I do for a sauteeing recipe. Even after it was cooked, the filling was a wee bit runny-- tasted fine-- it just oozed out and wasn't as "solid".
