Cindy's Awesome Clam Chowder

Very very good and couldn't have been easier to make. I added thyme and a splash or two of white wine and not nearly as many potatoes as the recipe called for (I used two huge baking potatoes). I also used turkey bacon. I'm sure it altered the end result somewhat but I try to trim calories and fat where I can.

Lemon Basil Roasted Chicken - Dr Oz

This was sensational!!! Instead of a whole chicken I used a half chicken, cut up and de-boned the breast. This was mainly because its only me and my husband eating but it also reduced my cook time. I reduced the other ingredients to 1/3 - 1/2 and used the remaining liquid as a brush-on baste. I also recommend only using fresh thyme and basil -- and lots of it!! Delicious!!!

Fried Zucchini Cakes

This turned out to be a good basic recipe that can be spiced up to match several cuisine styles; Mexican, Mediterranean, Asian, etc. As written, I think it needs some spice or herb. I used only 1/4 cup cheese. Maybe more cheese and a sharper cheese such as Asiago would do the trick.
