Sweet and Spicy Sweet Potatoes

This recipe is incredible! I've never had sweet potatoes like this before. I used three sweet potatoes and there was more than enough spice mixture. Next time I'll either halve it, or use four sweet potatoes. A really easy way to get the yam cubes coated is to put them in a gallon ziplock bag. Add the oil, seal the bag, and shake until they're coated. Then add the spice mixture and do the same thing. I can't wait to make these again!

Chef John's Italian Meatballs

So delicious!!!!! I used a meatloaf mix for the meat, and left out the fresh parsley and red pepper flakes. I baked them for 15 minutes and they were perfect. I used a disher and it made 27 meatballs. Next time I will cut out a little of the salt, but other than that, I wouldn't change a thing!

Chicken Marsala

The reason I gave this 4 instead of 5 stars is, I'm sure, because I did not buy high-quality Marsala wine. Here is what I did: Flattened the chicken breasts on the cutting board underneath plastic wrap. I put the flour mixture in a jumbo Ziplock bag and alternated adding chicken pieces and a little flour. When all the pieces were done, I sealed the bag and shook it up. I then browned the chicken and set it off to the side on a plate. I added probably 1 1/2 cups wine to the pan, along with the mushrooms. I let it reduce for a minute or two, then added the chicken back in. I turned the chicken once, simmering for probably 15 minutes while I made risotto. I turned the heat down to low and added a few tablespoons of half and half and mixed it in. The chicken was wonderfully browned and so tender I cut it with a fork.

Drew's World Famous Triple Rush Hot Chocolate

I made this exactly as directed, but after everything was mixed together, I strained it through a sieve and cheese cloth. I recommend making this in a glass measuring cup with a spout so it is easy to strain.

Chocolate Chip Cheese Ball

I made this for a Christmas party and my friends loved it! I served it with square pretzels for a sweet and salty combo, and cinnamon graham crackers. To make it easier, I mixed everything together, put it in the center of plastic wrap, formed it into a ball, and set it in a small bowl in the fridge. After it was chilled and hardened a bit, it was much easier to roll into a ball and into the pecans. I made it as round as possible before I took it out of the plastic wrap. Easy cleanup too!

Kim's Ultimate Meatloaf

I made this with ground beef and used ketchup instead of tomato sauce because I love ketchup and can't imagine eating meatloaf without it. It tasted amazing, the best meatloaf I've ever had! The only thing I didn't like was the amount of liquid in the bottom of the pan. Next time I don't think I'll add any water at all to the sauce topping. Other than the extra liquid, it had amazing taste and texture.
