Apple Cider Sauce and Pork Loin Chops

Like several others, I used fresh cider. I also used my food processor to thinly slice up two apples and one very large onion, which I heaped on top of the chops when I added the cider. I cooked it all on the stove top. The chops were as tender as any I've had. Even those who aren't big pork chop fans loved this. Quick and easy, I'll make it again and again.

Almond Citrus Couscous

The family was split on this one but, since I liked it, I gave it four stars. I served it with grilled lemon chicken. It needs to go with something rather bland because of its strong flavor.

Beef Marinade I

Dale's Lamb

Although I was in the hospital and unable to make this for Easter dinner as planned, DD's pitched in and did it. They followed the recipe exactly and brought me a plate of the best lamb I've had. I hope to make it again myself next Easter.

Strawberry Rhubarb Meringue Dessert

My daughter made this for the family for Easter dinner. I had planned the menu, but was admitted to the hospital on Good Friday, so couldn't do the cooking. DD made a couple of fatal mistakes the first time around, so had to make a second batch. They brought dinner to my hospital room. Although the taste was wonderful, this dessert was a little too sweet for my taste. The rest of the family (fourteen of them) loved it.

Baked Lemon-Basil Pasta

I can't rave enough about this dish. I doubled the recipe, then tripled the chicken. We are not usually big eaters, but this was so delicious that we all had, at least, seconds. It barely fed the six of us. I will be serving this to friends and, often, to family. Thank you, thank you for this marvelous recipe.

Oven Fried Buttermilk Halibut

Everyone in the family, including my five year old grandson, ate and ate until there was no more. They all agreed that, although it was saltier than we would have liked, it was the best fish recipe ever. I used Triscuit rye crackers and followed the recipe exactly. Next time, though, I'll try using a less expensive fish of similar density.

Apricot-Glazed Green Beans

I will be serving these again and again. I cooked them briefly in a skillet with just a little bit of water. Be sure not to overcook. I couldn't find jam, so I used apricot preserves. The hint of sweetness from the preserves made salt unnecessary. Even my five year old grandson had two helpings. Yummy!

This was good, but I wasn't blown away. I did us a rather heavy BBQ sauce, which may have overpowered the jam too much. It's worth trying again with a lighter sauce.

A Lot More Than Plain Spinach Pie (Greek Batsaria)

I loved this! The rest of the family, not so much. They didn't like the "hint of mint," but I thought it added to the dish's appeal. I don't think it reheats well, though. I will make it again since I like it and I'm the cook.

Slow Cooker Chicken and Sausage Gumbo

Although I don't make gumbo often, I can't imagine a better one. We all had seconds, including my six year old grandson. I served it with scalloped sweet potatoes and apples. It was a perfect meal.
