Pumpkin Roll Cake

Beautiful! I almost chickened out and tried for a layer cake instead because I was worried I would make a terrible mess while trying to roll/unroll. I made the cake exactly as recipe stated. Sprayed my parchment paper and it did not stick to the cake even a little bit. Flipped it directly onto a pillowcase sprinkled with confectioners sugar, rolled it up and stuck it in the fridge to cool which took about 90 minutes. When I unrolled it there was not even a hint of cracking. I did use the whole 8 oz of cream cheese for the frosting-also added 2 T of heavy whipping cream and 1 1/2 t of cinnamon to the icing. I ended up wit a little extra which I spread on top. I was told it was "too good". Will make this again for Thanksgiving next year.

Real Hummus

I did not like this at all. I think it would have been better with roasted garlic and less lemon juice. Between the raw garlic and the lemon juice it was overly acidic. Normally I love lemon but this was a bit much even for me.

Frosted Banana Bars

These turned out quite nice. Cooked in a 11 1/2 x 14 1/2 pan and they were perfectly done after 25 minutes. I used 1 cup white sugar and 1/2 brown sugar and frosted it the whipped cream cheese frosting from this site as suggested. Took it into work today and received many compliments including "that was heaven!". There were no leftovers:)

Low Carb Cauliflower Leek Soup

Just made this soup for the first time tonight and it was fabulous! I did as others suggested and broiled the cauliflower & garlic with olive oil , salt & pepper until slightly golden. I only used 5 cups of broth and boiled everything for only 20 minutes. I did use the heavy cream in the end and I think this what put it over the top-delicious!

Mexican-Style Goulash

What a great one pot meal! I did change a couple things-used vegetarian ground beef, slightly less chili podwer and added 1/2 t each of the following-cumin, chipotle seasoning and paprika. Really good-will make many times in the future:)

Shiitake Scallopine

This was quite good. Have to say I changed a few things-used oregano instead of thyme since I am allergic, used only 2 T olive oil and added 2 T butter. Last but not least I subbed pan sauteed asparagus instead of artichoke but only because I didn't have any. Turned out really yummy-leftovers warmed up well the next day.

Spinach Bars

This was great and easy! I made as directed except I used half the amount of cheese and had to cook it about 10 minutes longer than suggested. Bars did not get crispy but they were delicious. Leftovers were very yummy the next morning for breakfast.

Chicken Avocado Pizza

I made this pretty much as directed and it was good. Only changes were to use chicken substitute (I'm a vegetarian) and lemon juice since I didn't have lime juice. Only issue was that I have never had warm avocado before and found it kind of strange. I would make this again but maybe keep the avocado spread as a side to spread/dip the pizza in after broiling.

Insanely Easy Vegetarian Chili

This is a great chili. I left out the carrots and mushrooms and added a can of black beans in thier place. Also I used tomatoe puree instead of peeled tomatoes since I don't like their texture. Last but not least i put in a little vegetarian sausage to thicken it up a bit. This keeps well and is a quick delicious lunch throughout the week.

Vegetarian Tortilla Stew

This goes together fast and tastes delicious. I generally make things exactly as the recipe states the first time around before I add any personal touches. The only thing I did differently the second time around was add a small chopped onion and half a diced, seeded jalapeno for some heat. My husband says I should make it more often every time he has it:)
