Slow-Cooker Pepper Steak

Ok, not great. I think it all depends on the meat you buy and my meat was so-so. Toughened up in the cooking process.

Spinach Stuffed Portobello Mushrooms

AMAZING! So easy! I have made these 5x in the last 3 weeks. They re-heat really well too so you can make/bake ahead and then refrigerate and reheat. Best advise is after you chop the fresh spinach, put it in the microwave for 45 seconds to let it wilt a little. Then mis with all the other ingredients. I also used thinly sliced Peppered Salami chopped up... so tasty!

Paprika Chicken with Mushrooms

5 Stars with my simple changes -- saute mushrooms and onions first in pan with some butter and Worcestershire sauce. Remove. -- bread chicken with sage spice. Saute in pan with butter. Remove and then add 1 c chicken broth and some red wine -- reduce to 1/2 and add a bit of flour to thicken. Lay chicken on plate, put sauteed mushrooms and onions on top and then then pour the yummy sauce on top!

Bean Soup With Kale

Wow, excellent and healthy! Super yummy! I used a can of crushed tomatoes as I did not have fresh on hand. Was not sure about the tomato flavoring until the second day when all the seasonings had time to mingle -- excellent from day 2 and on. Added 4 chopped carrots for added veggies and 2 stalks of celery chopped too! Used Herb de Provence seasoning as others had suggested -- excellent addition instead of italian seasoning!. Had to simmer the soup longer to get my Kale to the desired tenderness!! Will make again and again!

Quinoa and Black Beans

Wow, wow, wow! This is A-M-A-Z-I-N-G! I cooked the recipe as stated and only add a dash of cayenne (to my preference). This will now be my go-to salad for easy, low fat lunches and also to take to potlucks, etc. What a great tasting recipe! Yummy!

Grandma Johnson's Scones

Excellent! I halved the recipe since it was for 2 of us! I beat the egg with 1/2 tsp vanilla and then poured half in the dry mix. I also slightly melted the butter. I thought the dough was a little sticky when I formed in a round but the end result was FANTASTIC! Perfectly moist and yummy! I used dried cranberries for 1/2 the dough and chocolate chips for the other half.

Butternut Squash Bisque

This soup is AMAZING! We do nto add cream and still get the desired thickness/creaminess. I only use 3-4 cups chicken broth along with 3-4 large carrots and 1/2 onion. It's so good and we make this all Fall/Winter and with it being so low fat it's perfect! Toddler loves it too!

Salsa Chicken

Wow, so EASY and so MOIST! My Toddler ate this up! We used mild salsa and spread liberally over chicken and it was so good and done in 20 minutes. A great go-to recipe with ingredients on hand!

Artichoke & Spinach Dip Restaurant Style

FANTASTIC!! We always make this as an appetizer if we have guests over and they are drooling when it's all gone! I think the key ingredient is homemade alfredo sauce -- super easy and from this site! I make the dip a day ahead and then pop in the oven before everyone arrives -- delicious!

Excellent! Excellent! I also only used 1/2 cup liquid (1/4 c water + 1/4 lemon juice) with the cornstarch mixture and it was perfect! Mine only took barely 20 min to bake! Yummy!!!

Very Easy Mushroom Barley Soup

Fantastic soup! Only thing I added was 2 bay leaves while simmering and about 3 tablespoons of red wine. A good chicken stock will make all the difference in flavor for this soup! This recipe is a keeper!

Snowballs II

Excellent, Excellent! A keeper in my recipe book! I found if my butter was slightly melted the dough was not crumbly at all. I also took a cup of chopped pecans and put in a plastic ziplock and rolled with a rolling pin to crush even more. The smaller the nut the better in my opinion. I baked only 10 minutes...much better under baked. Store in air tight container or they will dry out quickly!

Sweet, Sticky and Spicy Chicken

EXCELLENT! Husband says it's better than take out! I used a lot of pepper, garlic and onion powder mixed with flour to "bread" the chicken before I cooked in a pan with some butter on high heat. Reduced soy sauce to 3 tblspn as others suggested. I did not add the hot sauce, however the pepper on the chicken gave it a perfect kick! Fresh ginger I think is also key.High recommend and will make again and again!

Insalata Caprese II

As crazy as this sounds, if you omit the mozarella you still have a wonderful taste and it's filling. I ate 4 tomatoes myself yesterday with a touch of olive oil, salt, pepper and fresh basil for lunch. I also added balsamic and it was outstanding. Try it without the mozarella if you are on a diet like me :)

Pretty Chicken Marinade

The chicken had a nice color but I don't think the marinade gave the grilled chicken much flavor. I have had better marinades on chicken. I marinaded for 7 hours too.
