Cucumber-Watermelon Salad

I love this recipe. I've made it twice. The first time exactly as the recipe stated. I did peel and seed my cucumbers. The second time I added crushed pineapple, fresh chopped cilantro and freshly grated ginger. Both versions were absolutely delicious! A keeper!

Poached Fish with Cucumbers

My husband loved this fish dish, and he's not much for fish. I did make the cucumbers in sauce a bit different than listed to make it a healthier choice. I used FAT FREE (Yes, they make it) half and half instead of heavy whipping cream; then I added 1/2 cup of fresh diced tomatoes, 1/2 tsp black pepper, 1/2 tsp dill weed, and I substituted sweet and spicy mustard instead of the plain mustard. I served the poached fish aside seasoned couscous and topped it with the cucumbers in tarragon sauce; I then topped that with some diced roasted red peppers for appeal. Thank you Dickie, for another way to use up my garden cucumbers.

Scotch Eggs with Mustard Sauce

Karen, I tried your version of these eggs and it is very good. I make mine a bit different, but they're from my grandmothers recipe and she's an Irish woman. We've been making these for years. Everyone ask's for the recipe! Did you know you can also make these with turkey sausage and bake them instead of deep frying them? They're very good that way, and much healthier. I like to make them at holidays for breakfast. I serve them with Hashbrowns and fruit.

Glazed Pork Tenderloin

Very good recipe. I've made this three times and everytime it was moist and tender. I bake it longer at a lower temperature which keeps it ultra moist and tender. (350 degrees for 45 minutes). I used orange marmalade once instead of the pineapple preserves and it came out wonderful. I didn't have fresh rosemary so I used dry. I actually sprinkled it on after rubbing the loin with salt and pepper, and left it on during the entire cooking process. I also add 1/2 cup of water to the pan before baking, which keeps the sauce from burning in the pan. I pour all the sauce over the tenderloin and use a thermometer to keep from over-cooking. Great recipe.

I liked this recipe. I did add some sweet yellow onions cut into straws. They added a nice flavor. I also boiled my green beans in beef broth using a bouillon cube; which added some earthiness. Thank you for this nice recipe.

Very good soup recipe. I boiled my beets first, and then the peels just fall off. It is much easier than peeling first. Thank you for a good beet recipe.

Molasses Bran Muffins

My grandmother made the best bran muffins in the world. I have been looking for a recipe like hers and this is it. I used whole wheat flour and added 1/2 cup of wheat germ to make them fiber healthy. I also add more molasses and raisins, and then added vanilla and cinnamon like grammy did. This lends to a tastier, heartier, healthier muffin. These are wonderful warm spread with real melted butter.
