Mom's Coleslaw

I use 2 bags of slaw mix with the whole recipe. It's best if you add a little more slaw mix the next day to absorb some of the extra liquid.

Mom's Zucchini Bread

Delicious! (I'm tempted to eat a whole loaf myself!) I made some modifications to this recipe: I did 1/2 all-purpose flour and 1/2 whole wheat flour. I also reduced the sugar to 2 cups and did 1/2 white and 1/2 brown sugar. It took the full hour to bake in my oven. The only complaint I have about the bread is that it didn't rise as much as I would have liked. It did make a nice dense, moist bread. The substitution of wheat flour could have contributed. Next time, I will increase the oven temp to 350 to see if I can get a better rise. I will do the flour/sugar changes as I did this time and also substitute 1/2 c unsweetened applesauce for 1/2 of the oil.

Garlic Corn on the Cob

Not my favorite. I guess I'm pretty plain when it comes to corn on the cob. Good corn on the cob should only need a little butter and nothing else. If you want corn on the cob but live somewhere where it's hard to get good ears, this may help make up for bland corn.

Cheddar Ranch Dip

An easy twist on the basic ranch dip! It has been a big hit at parties and people request it all the time. Adding green onions may be good for a little color, too.

Pumpkin Pancakes

These pancakes are delicious! I make very small pancakes using 1/2 of a cookie scoop. I freeze them flat, then transfer to a gallon bag. In the morning, I pop a few in the microwave for a few seconds and give them to my little guy for a very quick breakfast! I added a handful of chocolate chips to some of them. SO delicious! No butter or syrup necessary!
