Overall, this is a hearty, simple, and very tasty recipe. I poached my chicken to cook it quickly, and two large boneless breasts seemed to be just enough.
As someone else mentioned, it is a lot of food for just two, and I agree that I would cut the recipe in half and use a 9x9 baking dish.
Instead of making the biscuits I used pre-packaged home-style buttermilk biscuits, and they worked great!
Also, the bottom of the biscuits don't get crispy because they soak up the moisture from the chicken mixture. I prefer mine crispier, so next time I would save some biscuits and bake them aside from the mixture and just spoon some on top.
