Family Casserole

Black Russian Cake I

Quick and Easy Green Chile Chicken Enchilada Casserole

Great casserole! I used half monterey jack cheese and half cheddar. I only had 2 10oz cans of green enchilada sauce, so I used those plus another of red enchilada sauce. I used the red sauce to soak the tortilla pieces in for the top layer. I used half a packet of taco seasoning mixed into the sour cream. It all fit well into a 9x13 pan. Thanks for a great recipe!

Easy Spinach Lasagna with White Sauce

Very good flavor, but noodles were too firm, next time I will cook the pasta first. I halved this recipe, but left the full amount of spinach in. Very tasty.

Over the Top Nachos

Yummy! I took some suggestions from the previous reviewers: I added taco seasoning to the ground beef (using Taco Seasoning recipe from this site). I spread the tortilla chips onto a cookie sheet, and baked for about 10 minutes at 350 to make them crispy. Then I just added the toppings onto that. Popped the pan back into the oven until the cheese melted, and it was done. I did not heat the refried beans first though, I wish I had, they were difficult to spread, so I just ended up plopping spoonfuls onto the chips.
