Tuscan White Bean Soup

Very tasty. Used turkey bacon to cut down on fat and left out the celery because I personally don't like celery. An important tip- Make sure you blend the mixture in batches because if you put the entire thing in the food porcessor at once, it will leak out of the middle. I wasn't thinking and poured the whole thing and ended up losing a lot of the broth. It was still very good though!

Homemade Black Bean Veggie Burgers

These are delicious if you follow others advice to make sure the excess liquid is removed so you don't end up wih a mushy mess. Pat the black beans dry after rinsing. More importantly, after chopping the onion/pepper mixture, squeeze out the excess liquid with your hands. There is a lot! This is really the only mdification that I needed to make delicious, perfectly bound yet still moist patties. I have also made it by adding zucchini and cilantro to the onion/pepper mixture, sauteeing some chopped onions and jalapenos to top and making a chipotle mayonnaise for the bun. Delicious both ways!

Best Italian Sausage Soup

Absolutely delicious. I halved the recipe and there was still plenty for 3 people and leftovers. I used a large can of crushed tomatoes with basil instead of the whole tomatoes and fresh basil instead of dried- just because I happened to have it on hand. I also added about 3 large chopped carrots. I used the spinach fettucini and didnt have the same issues with it that others mentioned (hard to get in spoon) because I broke it up before cooking. Very, very tasty!

Pork Tenderloin with Steamed Kale

One thing needed to make this delicious- HONEY! The marinade seemed like it was missing something, so I drizzled some honey over the pork before baking. Then I mixed some honey in the leftover marinade to drizzle on top of the pork once it was done. Yum!! It was a big hit. I don't usually like kale, but I drizzled the marinade (with the honey) over top and it was really good. Also used fresh cilantro and didnt use nearly as much olive oil as was called for- prob half or less. Without the honey- don't know if I would have loved it. With the honey- will definitely make again!

Springtime Spaghetti

Really good! I added sliced red pepper and yellow squash, used whole wheat spaghetti and fat free half and half instead of cream. Don't skimp on the spices- I usually cut garlic in half for most recipes, but this really needed the full amount.

Bean and Honey Burrito Casserole

This was good but definitely has a "different" flavor. I was really in the mood for mexican food and, while I liked this dish, it didn't satisfy my Mexican food craving at all. I pretty much followed as is but left out the garbanzo beans

Fabulous Zucchini Grinders

I was skeptical but these really were delicious. I sautéed the zucchini in olive oil with chopped onions and a little garlic before mixing in marinara sauce. Melted the cheese on the rolls in a toaster oven. Then just scooped the zucchini mixture in and sprinkled a little Parmesan cheese on top. Didn't miss the meat at all-actually think I preferred this to meatball grinders.

Black Bean and Salsa Soup

So good, especially for how easy it is! Adding cilantro is a must- purée with bean mixture. I sautéed onions and garlic in pot first, then added bean purée. Added one extra can of whole beans. Garnished with sherry, sour cream, green onions and hot sauce. Delicious!!

Easy Meatloaf

Delish!!! Took others suggestions of sauteeing onions first, adding a liitle Worcester and garlic, and using seasoned breadcrumbs. Also doubled sauce. My 2 1/2 year old who eats nothing gobbled it all up. I would probably bake a little longer next time as it was fully cooked but a tad mushy.

Easy Vegetable Pot Pie

I was almost too intimidated to make my own homeade chicken pot pie (i am not the worlds best cook) but I am so glad that I went for it. Yum! I used frozen peas and corn instead of canned cause thats what I had (cooked them first before adding to soup mixture.) I also had fresh carrots so I cut up and cooked those and added them in. I also used a boxed pie crust instead of frozen- again, cause that's what I had. I took the advice of baking the bottom crust for a little first- about 6-7 minutes. Oh, also added precooked packaged chicken strips- cut up- cause my husband is definitely a meat eater. I liked it with the chicken, but I have to say, it would probably have been just as good without. A definite keeper!

Spanish Rice Bake

Yummy! Especially considering how easy it is. Just a few changes- I used yellow and green bell peppers from my garden. I didn't have a can of tomatoes, so I used a can of tomato sauce and added a fresh chopped tomato. The only rice that I had was Uncle Bens Ready rice so I cooked the meat mixture with everything except the rice and water. Then I added the ready rice in the last couple of minutes until it was heated through. Super easy and I didn't have to deal with the rice not being cooked enough like I read in some of the other reviews. Before baking, I mixed shredded cheese into the whole mixture in addition to sprinkling on top. Served with sour cream and crushed tortilla chips on top. It was a hit!
