Tuscan White Bean Soup
Very tasty. Used turkey bacon to cut down on fat and left out the celery because I personally don't like celery. An important tip- Make sure you blend the mixture in batches because if you put the entire thing in the food porcessor at once, it will leak out of the middle. I wasn't thinking and poured the whole thing and ended up losing a lot of the broth. It was still very good though!

Homemade Black Bean Veggie Burgers
These are delicious if you follow others advice to make sure the excess liquid is removed so you don't end up wih a mushy mess. Pat the black beans dry after rinsing. More importantly, after chopping the onion/pepper mixture, squeeze out the excess liquid with your hands. There is a lot! This is really the only mdification that I needed to make delicious, perfectly bound yet still moist patties. I have also made it by adding zucchini and cilantro to the onion/pepper mixture, sauteeing some chopped onions and jalapenos to top and making a chipotle mayonnaise for the bun. Delicious both ways!

Best Italian Sausage Soup
Absolutely delicious. I halved the recipe and there was still plenty for 3 people and leftovers. I used a large can of crushed tomatoes with basil instead of the whole tomatoes and fresh basil instead of dried- just because I happened to have it on hand. I also added about 3 large chopped carrots. I used the spinach fettucini and didnt have the same issues with it that others mentioned (hard to get in spoon) because I broke it up before cooking. Very, very tasty!
