Chewy Chocolate Chip Oatmeal Cookies

Great recipe! I've never made oatmeal cookies before but after a friend made the same recipe and liked them, I decided to give them a try for my boyfriend's birthday. He doesn't love super sweet deserts and cookies, and I don't like nuts, so I doubled the chocolate chip amount and used dark chocolate. Sneaked 1 cookie in the oven before I make the entire batch tomorrow and it turned otu great! I followed other suggestions and added a 1/2 cup of flour and a 1/2 tsp of baking soda. I don't know what they would have been like without this adjustment, but I loved them with it! I think next time I might use 1/2 semi sweet and 1/2 dark chocolate chips, but overall an easy great recipe!

Southwestern Pasta Salad

I ended up added onions and a sprinkle of cheddar cheese but I though the salad came out very dry and on the bland side - too much of a lime taste if i added more juice, not enough of the spice. I followed other suggestions and added extra chili powder but it didn't help. What we ended up doing to force down the left overs was add some salsa - then it tasted alright. Probably won't be making this again.

Chicken Cordon Bleu II

very easy and delicious. I scaled it down to 2, but made sauce for 4 to serve as gravy over mashed potatoes. It didn't take long to make at all. I followed what another reviewer suggested and after I browned it I put the chicken in the oven. Otherwise I followed the recipe as written and it was a big hit!

Apple Walnut Bread

Good bread. I can't eat walnuts, so instead i added about a cup of fresh blueberries. I also used all apple sauce, and no oil, and didn't use wheat flour because I don't have any. I also used about 1/2 the amount of cinnamon and 1/2 ground nutmeg. Overall, it was very good and I"ll add it to my recipe book. One complaint, and this might be a personal preference because it seems all my breads come out this way, it was a bit too sticky and moist for me. I like breads I dont have to remove the sticky residue from my finger each time I touch it.

Mom's Zucchini Bread

I've never had zucchini bread before, let alone make it myself, so needless to say I wasn't sure what to expect. I used unsweetened apple sauce instead of oil; reduced the sugar by 1/2 cup and did 1c white; 3/4c brown sugar. I also followed other reviewers suggestions and use 1c whole wheat flour. I used probably closer to 4 cups zucchini (perhaps 3.5; it was 4 small zucchini) and added 1/2 tsp of nutmeg. Overall, its delicious. very moist, but still a little sweet so next time i'll probably reduce sugar more and add more zucchini. I had to give it 5 stars though because, even if it was sweeter and less zucchini-ish than expected, it is still delicious!

Pollo Fajitas

I made this a few weeks ago and it was great! I have always used the powder seasoning and had never done a marinade before but this one was fantastic. It's so easy too, I'll never use the powered store bought seasoning again. Delicious!

Downeast Maine Pumpkin Bread

I hate pumpkin pie, so I haven't tried other forms of pumpkin but I made this bread and it is so good! The pumpkin taste is subtle but the spices are perfect. I made it almost to the recipe except I substituted 1 cup of brown sugar for 1 cup of the white. I can't wait to try some of the "healthy" versions from other reviews. Also, i used slightly larger loaf pans and made 2 loaves.

Beef Stew VI

I give it 5 stars although I had to tweak it a little to get it to 5 stars. I think even with out the changes, it still would be delicious. I followed other reviews and added (red wine, tomato paste, etc.). The only change the recipe as written definitely needs is more vegetables. I added an extra carrot and used 6 yellow potatoes. Whether you make the other additions or not, you need to add more vegetables.

Spinach Quiche

This recipe is very forgiving. I didn't think I would like the combination of feta and cheddar, so instead i used some goat cheese, which I think has a similar tang as feta but is more mild. I also added about 1/4 lb of deli ham. I used a 9" deep dish pie crust and it was filled to the brim with a little left over, so you definitely need a deep dish crust. The quiche came out amazing and was even better on day 2! The only thing I did not like about the recipe was that there is entirely WAY too much cheddar cheese reserved for topping the quiche with. I only reserved 1/4 to 1/3 of a cup of cheese to top the quiche and it was still way too much. The result was a tough layer of cheese, rather than a soft fluffy quiche. Next time I will mix almost all of the cheese into the filling and add a light sprinkle when it has only about 10 min left to cook. I did not care for the cheese layer this recipe calls for and if you follow the recipe exactly, you may as well eat a melted block of cheese.

The Real Mojito

Delicious! I dont measure the amount of club soda used but I think it is probably just under 1/2 cup. Otherwise I follow the recipe exactly. These are delicious. I made this recipe 3-4 times and the last time I wanted mojitos, I spent a good 5 min searching the internet for this recipe - It can't be beat!

Creamy Mushroom Meatloaf

I've made this 2 times already - 3rd time will be this weekend. I use a very basic meatloaf recipe, and only use about 1lb of meat (just making it for 2 and I don't want TOO much left over). The creamy mushroom sauce is incredible. It keeps the meatloaf moist (even when using turkey!) and is delicious served over the meatloaf and mashed potatoes. I love it so much, I've pretty much stopped making meatloaf without this sauce. Oh, and I use regular mushrooms because shiitake are too expensive for my budget. Still great though!
