Creamy Mushroom Meatloaf
I've made this 2 times already - 3rd time will be this weekend. I use a very basic meatloaf recipe, and only use about 1lb of meat (just making it for 2 and I don't want TOO much left over). The creamy mushroom sauce is incredible. It keeps the meatloaf moist (even when using turkey!) and is delicious served over the meatloaf and mashed potatoes. I love it so much, I've pretty much stopped making meatloaf without this sauce. Oh, and I use regular mushrooms because shiitake are too expensive for my budget. Still great though!

The Real Mojito
Delicious! I dont measure the amount of club soda used but I think it is probably just under 1/2 cup. Otherwise I follow the recipe exactly. These are delicious. I made this recipe 3-4 times and the last time I wanted mojitos, I spent a good 5 min searching the internet for this recipe - It can't be beat!

Spinach Quiche
This recipe is very forgiving. I didn't think I would like the combination of feta and cheddar, so instead i used some goat cheese, which I think has a similar tang as feta but is more mild. I also added about 1/4 lb of deli ham. I used a 9" deep dish pie crust and it was filled to the brim with a little left over, so you definitely need a deep dish crust. The quiche came out amazing and was even better on day 2! The only thing I did not like about the recipe was that there is entirely WAY too much cheddar cheese reserved for topping the quiche with. I only reserved 1/4 to 1/3 of a cup of cheese to top the quiche and it was still way too much. The result was a tough layer of cheese, rather than a soft fluffy quiche. Next time I will mix almost all of the cheese into the filling and add a light sprinkle when it has only about 10 min left to cook. I did not care for the cheese layer this recipe calls for and if you follow the recipe exactly, you may as well eat a melted block of cheese.
