Pumpkin Chocolate Chip Cookies III

Yum yum. I'm on the blood type diet for type O and this recipe fit perfectly. I used both olive oil and canola oil and replaced flour with a mixture of spelt flour, buckwheat flour and rice flour. I used a bit more walnuts and less chocolate chips than asked for. Thanks, they turned out great.

Azteca Soup

I used some canned substitutes and it was still great...drained diced tomatoes instead of fresh and canned diced chilles instead of adobo. I also added canned black beans and corn a couple times for a heartier soup. Always topped with monterey jack cheese and tortilla strips (or chips). Always enjoyed to the last drop!

Black Bean, Sausage, and Sweet Potato Soup

Awesome. I had everything except allspice, so i added a dash of cinnamon hoping it wouldn't ruin it, but it turned out great. It ended up with a gravy-like consistency and taste, which is great when you know there's no gravy in it. I used canned black beans. I cooked the cubed sweet potato in the microwave and added it close to the end.

Spinach Salad with Pepper Jelly Dressing

I love the dressing. I usually make my own dressings because I don't like too much vinegar. I love pepper jelly and I never would have thought to make a dressing with it. I used feta because I don't care for goat cheese, pecans because I'm out of walnuts, and I also added some red pepper to the salad. Very quick and tasty.

Stuffed Guinea Squash (Eggplant)

This is right up my alley. I'll have to share it with my vegetarian friend. I used 1/2 c cheese in the mixture and sprinkled 1/2 c on top and found that was plenty for my taste. I made the mistake of using loive oil to fry the veggies and the eggplant sucked it all up along with the oil taste so next time I will use butter like it calls for.

CCRyder's Smoker Rib Rub

I just made ribs today with this rub and they were amazing! It was my first time smoking ribs and I'm still new to using the smoker but it was perfect. I rubbed the ribs, refigerated for about 4 hrs, let them come to room temp before putting them in smoker. Smoked at 330 F for 3 hrs then wrapped in foil and cooked another hour then let them sit in the foil for 10 mins or so before opening them. I don't know if it did anything but I added a bit of raspberry vinegar to the pan of water in the smoker since I've read to use apple cider vinegar to tenderize and didn't have any. Thanks for this rub recipe. I will be using it again and again.

Raspberry Lemon Muffins

Delicious. I used a cup of fat-free strawberry yogurt, juice and zest of a whole lemon, vanilla instead of lemon extract, mixed whole wheat and white flour, almost 2 cups of frozen raspberries, added ground flax, and reduced sugar slightly. In an attempt to make a not unhealthy recipe healthier the slight changes I made still made for a great muffin. Next time I will use greased muffin tins as a good portion of the muffin stays attatched to the paper cup.

Apple Pinwheels

These are so easy and delicious. I didn't have butter so I used margarine and it worked well, though it made a lot of sauce so I only used about half of it. I also had issues with the dough falling apart, so I wet my fingers with water and rubbed the seams, and sort of held it all together as I rolled. Then I placed them in greased muffin tins to keep them from falling apart. I will make these again.

Onion Bulgur Salad

Very fresh tasting! I didn't use mint because I didn't have any. I added 1/4 cup of chopped fresh cilantro to the mix, which was a great addition. I wanted another grain so I added about 1/2 cup cooked green lentils, which gave it an additional chewy bit of texture. I didn't use all of the bulgur (will add some fruit to it and have for breakfast tommorow). I will make this again, or at least some variation of it. Thanks

Japanese Zucchini and Onions

I was amazed at the simplicity of this dish. It might be the quickest dish I've ever cooked. I found the flavour was very good considering the effort, but not spectacular. I meant to add garlic but forgot. That might have done the trick. I threw in about 1/4 of a red pepper that I needed to use up and also added some cooked chicken from my freezer to make it a fast, complete meal.

Chicken Tortilla Soup I

Very good recipe. I was trying to make something like the Aztec soup from the Mexican restaurant that my boyfriend LOVES for Valentines. He said he liked this one better because I didn't cheap out on the good stuff! The only real change I made was that I used a can of drained diced tomatoes instead of crushed and extra broth because I wanted it more like chicken broth rather than a tomato-based soup
