Angela's Awesome Enchiladas
AWESOME and OUTSTANDING enchiladas. Followed the recipe with following minor modifications: diced 2 chipotle peppers in adobe and added to soup/sour cream mix. At about 1,700 mg these enchiladas are almost a entire days worth of sodium. I made my own spice mix instead of taco seasoning pack and reduced cheese to 2 cups. Next time I intend to spray the bottom of pan with cooking spray. The soup/sour cream mix did not keep the enchiladas from sticking and this will result in further sodium reduction. This recipe will be enjoyed for a long time. Thanks for sharing.

Condensed Milk Chocolate Frosting
update to my post of 2 days ago: after 8 minutes on stove top frosting turned out a little thicker than store bought frosting. with the addition of 1 TBSP water and the vanilla it turned out as advertised. it will thinly frost a 9X13 cake.

Boilermaker Tailgate Chili
ABSOLUTELY AWESOME!! have collected and tried dozens of chili recipes over the years...some good, some bad...some well, you know. this is the best of the best. made some minor changes, i.e. no celery, no bacon bits, no teaspoon of salt (plenty of sodium in other ingredients), and used three cans of small red beans (two of which i drained)in place of chili beans. plenty of heat from the two teaspoons of tabasco. recommend this to anyone who likes chili. they won't be disappointed.
