Italian Sausage Soup with Tortellini
This was delicious. I had some beef broth I'd made and was looking for a new recipe to use it in. I used leek instead of onion, because my husband doesn't like the texture of cooked onions. I also had to use fresh oregano instead of dry because it was all I had on hand. I will probably try this with a different flavor of tortellini in the future, maybe something with garlic or basil in it, as the soup itself was fantastic but the plain cheese tortellini was a little bland for our taste.
