Chipotle Crusted Pork Tenderloin

This was terrific! Plus, it was incredibly easy and fast to prepare after work. I followed the recipe exactly and then squeezed fresh juice from an orange over the top before serving. It was sooooooooooo good and moist. My husband couldn't believe it was just a dry rub.

Roasted Green Chile Stew

Excellent stew! Just like I've had in Santa Fe. I omitted the serranos to keep it on the mild side for everyone's taste. I used fresh roasted chiles so the flavor was not compromised. The chilies make the stew!!!

Sarah's Applesauce

My family loved this applesauce. My husband is diabetic so I tweeked it a bit. Used combination of Gala, Honeycrisp, and Fuji apples (what I had and plus they are sweet too), and I substituted the sugar for Stevia in the Raw. I also doubled the cinnamon, because we are cinnamon lovers. It was fabulous!

Colleen's Slow Cooker Jambalaya

Excellent flavor, and very easy. I too have made jambalya the traditional way many times and prefer the rice cooked in rather than added at the end as the recipe. So I added an additional 2 cups of broth and 1 1/2 cups of brown rice during the last hour. After it was done i turned to the warm setting as our dinner was an "eat when you want" style that night. The rice became mushy and overpowered the favors. Had we ate it right away, it probably would have been fine. Next time I will simply add cooked rice to the bowls prior to serving, or I may try cooking the rice, cooling completely, and then adding into the pot when I add the shrimp.

Spicy Orange Beef

Excellent flavors! I followed the recipe exactly. A little too much sauce for our family. But, I had some leftover grilled steak that I sliced, and then tossed with the leftover sauce. It was really good! Next time I will grill the steak, slice it, then finish in a very small amount of oil and then add in the sauce. This will cut down on the fat. I also will cut the broth and cornstarch in half. I'm going to try it with chicken too!
