Curried Stuffed Acorn Squash
Healthy and Yummy! I pretty much followed the recipe, except used jasmine rice since I had no brown rice, so shortened the time of simmering to 18 mins. My acorn squash was pretty large so I cut it in 4, and placed flesh down in a microwave safe roasting dish, covered with plastic, so it took a little less time. It needed a little salt, next time I will add it before serving. The curry and red curry paste make the dish. The feta cheese was a great addition on top. Definitely jazzed up the acorn squash!

Buffalo Chicken Rolls
Loved these! I'm always trying to find ideas for chicken that my fiancee will enjoy (he's not a fan of chicken, but loves chicken wings.) I used swiss cheese (all I had) and it tasted great. We both loved it, so I know I will be making them again soon!

Ground Beef 'Wellington' with Fennel
Mmmm. yummy. I am gluten-free, so added gluten free crumbs, and left off the crust. Otherwise followed the recipe. Added fresh parsley instead of dried. I made large meat balls, and placed them in a cupcake tin. Placed foil underneath in the oven for spillover. They were moist and delish. My fiancee had the ketchup out, but said, "mmm, it doesn't even need ketchup!" Will make again! I love fennel!
