Heavenly Potatoes and Ham

Reviewed: Jun. 5, 2006
Very, very good. I used the entire 5lbs. of potatoes (minus 2), and I omitted (on accident) the salt and pepper. I salted the water to boil the potatoes, but I completely forgot to season the dish. The next time I make this, I will pepper to taste, but leave out the salt entirely - between the ham, soup, and cheese, it didn't need any (and I general like more salt than most people). I used a pound of deli sliced honey ham, chopped, and it was perfect. The only suggestion I have is to mix everything except the potatoes in a large bowl FIRST, and then combine. It's a very large dish, so it was a little difficult to mix. It was delicious though, and I will definitely make this again. Perfect for a potluck, we had tons of leftovers.

Pollo (Chicken) Fricassee from Puerto Rico

Reviewed: Aug. 4, 2006
This is a delicious, authentic Puerto Rican dish. The recipe uses fresh ingredients and native spices. My husband is Puerto Rican and LOVES this dish. It is FAR from bland (didn't quite understand that review). This is as authentic as it gets! I needed two pounds of chicken drumsticks, so I just doubled the Adobo and used an entire packet of Sazon. It was fantastic! I have never been able to cook Puerto Rican food like my husband does, due to the fact that most of their cooking is done by taste, not measurements (and I could never quite master that way of cooking, LOL). So thank you very much for posting a recipe that us "non-natives" can make!!! Delish!!!! 8-)

Jennie's Heavenly Slow Cooker Chicken

Reviewed: Aug. 6, 2010
This is almost identical to the popular "Angel Chicken Pasta" on this site. The only difference is that this one has more cream cheese and less butter. I prefer the other recipe to this one.

Quick and Easy Chicken Noodle Soup

Reviewed: May 23, 2008
This is so easy, and I've made some changes to make it even easier. Saute the carrots along with the onions and celery. After adding and heating the broths, add raw cubed chicken breast pieces and simmer for 20-30 minutes. Ten minutes before you are ready to serve, add egg noodles. Simmer for 5 minutes and then turn off the heat. Let the soup sit for five minutes more. Only one pot to wash!

Restaurant-Style Buffalo Chicken Wings

Reviewed: Aug. 8, 2007
Amazing!!! My family thinks these taste just like the ones at Applebees. I doubled the recipe, but used 1/3 cup of butter instead of 1/2. In place of deep frying, I omitted the flour and baked them at 425 degrees for 45 minutes. I also used Frank's Red Hot sauce. Delicious!

Ultimate Frozen Strawberry Margarita

This is SO SO good. However, after trying it a few times, I've started cutting back the tequilla to 1/2 cup (4 oz.), otherwise it tends to sneak up on you too fast! :)

Charley's Slow Cooker Mexican Style Meat

Reviewed: Aug. 7, 2006
This is SO good! I skipped step one and just added all of the ingredients to the crockpot. The only extra thing I included was one beef bouillon cube. I shredded the roast about 2 hours before we were planning to eat and let it soak up the flavors. I must say, with all the ingredients, I was expecting a firey hot dish, but it really wasn't. Yes, it is spicy, but don't let the list of ingredients intimidate you, it's fantastic!

Slow-Cooker Pepper Steak

Reviewed: Nov. 26, 2010
Delicious! Took the advice of other reviewers and kept the green peppers out of the pot until the last couple of hours, which created the perfect texture (definitely NOT mushy). Did not saute the beef ahead of time, just dumped it all into the slow cooker. Will make again!!!

Garlic Green Beans

Reviewed: Aug. 31, 2010
Giving this 4 stars instead of 5, only because of the use of canned beans. I was not happy with the texture. Next time I will use fresh and parboil them. The flavor of this would be awesome with the slightly al dente crunch of fresh beans. I will also use a little less garlic next time. 4 or 5 cloves is plenty! I love how easy this was though!

Chicken Pot Pie IX

Reviewed: Apr. 4, 2008
My family raved over this, and we aren't big pot pie fans. I used the suggestion to boil the chicken and veggies in chicken broth instead of water, and it was fabulous.

Sarge's EZ Pulled Pork BBQ

Reviewed: Sep. 20, 2006
Very good! I added garlic powder when seasoning with salt and pepper, and used 1 tsp. liquid smoke. I also took the suggestion to serve with Sweet Baby Ray's BBQ sauce. I chopped the meat and put it back into the slowcooker with the leftover juices and bottle of BBQ sauce, but next time I will serve it immediately with the BBQ sauce on the side.

Grandmother's Buttermilk Cornbread

Reviewed: Jan. 2, 2012
Best cornbread recipe I have ever used. The only thing I changed was to use whole wheat pastry flour. I have made it both ways now and my family (surprisingly) prefers the pastry flour to all purpose white.

Playgroup Granola Bars

Reviewed: Jan. 30, 2011
Great recipe! Kids loved these! I followed the recipe exactly, with the exception of substituting mini chocolate chips for the raisins. I also used whole wheat pastry flour instead of white. They freeze well, so it's easy to make more than one batch at a time. Tonight when I make them, I am going to try 1/4 cup ground flax seed and 1/4 cup wheat germ, instead of all wheat germ. I am so happy to have a homemade substitute for the grocery store granola bars that are full of unwanted ingredients!!! Thank you for the recipe!

Next time I will swap the measurements for salt and pepper, as it was a little too peppery for my taste. Otherwise, very good!

Catherine's Spicy Chicken Soup

Reviewed: Jul. 29, 2007
I thought this was just OK. I'm kind of stumped at all of the 5-star ratings. I followed the recipe exactly as written, but used fresh chopped tomatoes and corn instead of canned. It was kind of bland and did not have *nearly* enough salt, even for my husband who doesn't like a lot. This could partially be my fault, because I didn't account for the fact that canned vegetables probably have more sodium and needed less salt in the original recipe. So if you use fresh veggies, you may need to add salt. It was definitely spicy, but just enough. If I make this again, I will use chicken breast w/ bone to make a more flavorful stock as well as some cumin in the soup. Mexican shredded cheese and tortilla chips go well with this. Update: Awesome when recipe is followed exactly (canned veggies instead of fresh).

Coquito

Reviewed: Jan. 2, 2012
My Puerto Rican husband LOVED this. He was a little skeptical at first, that it would be anywhere near as good as his mom's, but he said this is even better! He keeps requesting that I make it. Being leery of the egg yolks, I almost skipped that part, but I am SO glad I didn't! This is delicious!!!
