Heavenly Chipped Chocolate and Hazelnut Cheesecake

Absolutely Fabuliscious!!! This is indeed a very simple recipe although it does take time, i.e. 1 hour to bake, 1 hour to cool. The result is a very pleasing dessert to all ('xcept those you can't eat nuts) with a good consistency and satisfying experience all around. I have relied on this recipe now for all special occasions and for guaranteed smiles: b-day, family get-together, parties, holidays.... absolutely a must in the tool-box. Also, many people always ask for the recipe. You could probably start your own business just selling these.... :-P

Conchi's Sangria

I hadn't made Sangria before until my boyfriend's 36th b-day recently. . . the beverage was a hit. Many comments that it was really good. I DID add Jamaican Rum to the mix though. This recipe made 6 pitchers.

Edie's Patatosalata

Oh yes, just what I was looking for. Very simple and ingredients that combine well for a satisfying meal or side-dish. I've served this to many at home and for parties. Leaving the skins on is a good idea too. This dish reminds me of the Greek version of potato salad I had as a kid. It can be eaten warmed up or straigth from the fridge. It keeps well and also a good way to cook up potatoes you haven't used up that may go bad if you don't DO SOMETHING soon with 'em. Thanks. "Edie" is a household name around our place.

Best Carrot Cake Ever

I made this cake as one of my boyfriends b-day cakes at our recent garden party. We had about 25 people who gave it rave reviews. One man claimed he doesn't eat carrot cake but THIS TIME. . . The recipe was also requested by others. It did look as delicious as well. It wasn't TOO moist, which is good. I chose this one for the two round cake layers that produces but used the cream cheese frosting recipe by Tracy Kirk but added pistachios instead of pecans - the hints of green and taste worked out well. This is a keeper!

Apple Bundt Cake

I made this a while ago for my in-laws: they enjoyed so much that these two were done with it within a few days. My "Mami" requested the recipe to make again for herself. It was INDEED a great way to use up a bunch of ripened apples before they went bad.

Cranberry Pistachio Biscotti

I doubled-up this recipe and made loads to give away. They're great and others liked them as well. Not too sweet tasting and the almond extract is a must. The only problem I encountered is that I suspected recipe asks for too much pistacchio so I used waaaay less and they came out chock full o' dem.

Poppy Seed Hungarian Style Cookies

Even though I made them a month ago and can't remember the adjustments to ingredients I didn't have on hand at the time I DO remember that these were indeed excellent and well received by all! Thank you. They are to be tightly sealed and eaten days later for best flavour and chewy factor. My hungarian boyfriend's dad ate a plate of them in one sitting -- they are very edible. My boyfriend really likes 'em too as well as friends wanting new ways to use poppy seeds. Thanks again. Will remake many-a-times. P.S. Most important note: they're best eaten at room temperature.

Lentils and Rice with Fried Onions (Mujadarrah)

Although a good attempt at using lentil in a quick recipe, I found this to be too bland and dry. No real flavour unless you work on it like others have I guess. Not worth my trouble though.

Absolutely Fabulous Greek/House Dressing

This is a good basic greek salad dressing and one you should try although I wouldn't refer to it as something exceptional -- it's good. Quick to make with standard ingredients from the pantry and easy to modify according to tastes. Added lots o' garlic, onions, and parsley and used it to marinate chicken strips/pieces that were folded into pita bread. Yummy.

Beefy Lentil Vegetable Soup

Yup, this was great! It was hearty, excellent during cold winter months (or any other day really) and sure to please everyone. Is also easy to get creative and customize seasonings and spices to your taste. I could not let this recipe pass without expressing my thanks. Yoohoo, it's a keeper.

Orzo and Potato Parmesan

Wow! Doggie-Daddy asked, "Are we out of food?" and I replied, "Why no!" and quickly searched for a recipe involving orzo et voila! -- this recipe certainly did the trick. It's a keeper. While cooking the smell is wonderful: like hashbrowns (potato is in the mix) and I do declare that Parmesan may be omitted. . . I tasted it before pouring on the cheese and it can really be eaten either way. Also added thai pepper for a touch of heat and didn't have carrots so yes! it's a good base to go on -- orzo, potatoes, onions, garlic, butter are the musts for this taste I think. Only thing though, it took me longer than 30 mins. (the simmering alone is 12 mins.) and there's minced, dicing, peeling involved so I'd say it generally would take about an hour instead... or am I just a turtle. Eat it up dudes! Thanks.

Morning Glory Muffins II

This recipe is great! Have been in search of a moist muffin mix with wholesome goodness...just made 'em and ate 'em (not ALL! of them). Will be perfect for toting to work. I used the idea of replacing 1/2 cup of white with whole wheat flour and crushed walnuts instead of pecans -- also had no coconut. Both Doggie-Daddy and I will heartily enjoy them! THanks.
