Carrot-Raisin Salad (Bunny Salad)

Reviewed: Apr. 25, 2011
Every child ate it! My mother-in-law said it looked very "Food Network". :) Also, I prepared mine the night before and had no problems with discoloration or soggy-ness.

Gina's Lemon Pepper Chicken

Reviewed: Jan. 16, 2008
Worth doing again! I'll pre-brown it next time. I was too liberal with the spices and it was too peppery for my kids. Easy, quick, went well with white rice & steamed broccoli.

Impossible French Apple Pie

Reviewed: Nov. 22, 2007
I took some liberties with this: added maybe 1c. cranberries, the apples were already seasoned from another apple pie and I used a stoneware pie plate. It took nearly 2 hours at 350. Finally I shut the oven off with the pie inside and went to do my hair - came back and it was finally done. Hopefully it eats as good as it looks - which is pretty awesome.

Fragrant Lemon Chicken

Reviewed: Oct. 30, 2006
Have yet to eat it.... Fragrant is right! 1 whole onion is too much, makes our eyes water every time I baste! I was in a rush so set the crock pot to 4 hours on high, but it's not done yet. I got a very low reading on my meat thermometer. So I guess I'll put it on low & let it cook all night. Smells good, looks tender, sounds good over rice if the onions ever get tender. Hoping for the best here!

Quick and Zesty Vegetable Soup

Reviewed: Oct. 5, 2006
Practically spaghetti. Useless as a soup. Oregano in a soup? Seriously. I practically had to re-create it. Added water, beef boullion cubes, skip the oregano. Now you have a stew. A very tomato-ey stew.

Cinnamon Rolls I

Reviewed: Mar. 29, 2005
Good and basic recipe. Made 9 rolls (2 barely rolls) in an 8x8. Not gooey enough. Didn't have to lick my fingers. More butter? Flavor was ok but I wanted sweeter. Over all good, just not Grandma's.

Cake Mix Cookies I

Reviewed: Dec. 23, 2004
So Easy! I used Lemon cake mix, added 1 tsp lemon extract and 1 c. fresh cranberries. Bake 13 min, cool 1 min. before removing. Wow! Moist and firm, not crumbly or dry yet. Made Tb. size- only 24 cookies, could eat all these by myself. If making the tsp. size cookie there would be only 1 cranberry in each, not a bad idea for presentation. Excellent recipe, easy to adapt to anything!

Blueberry Buttermilk Coffeecake

Reviewed: Jul. 3, 2003
I made a half recipe in an 8x8 pan, baked for 55 minutes and had no problems with sinking blueberries. I took this to a birthday party and left with just my pan! It's very light and not too sweet. Side note: I mixed it all with a whisk, that may have helped.

Iced Mochas

Reviewed: Jul. 1, 2003
This is awesome! I bet the caffeine content is lower than what you would normally get. Another option is not blending the ice at all - adding it last. I've had a lot of fun with this & my guests love it!
