Mediterranean Lemon Chicken

Reviewed: Jul. 19, 2011
This was tasty and super easy. The only reason I would not give this 5 stars is because there is not nearly enough sauce as written and I only used 2 chicken legs. I would recommend using at least 2 lemons and even a shot of white wine or chicken stock. All the ingredients worked well together and this is easy to throw together as all the ingredients are usually on hand. Will make this chicken again and just double the sauce next time!

Best Chocolate Chip Cookies

Reviewed: Aug. 28, 2011
The name says it all! These turned out exactly as described...crispy edges and chewy middles. The only small change I made was I used 1/2 cup sugar and 1 1/2 cups brown sugar. I also didn't disolve the baking soda, I just threw it right in. If you're looking for a delish cookie this is it!

Broiled Tilapia Parmesan

Reviewed: Sep. 29, 2011
This was good. I didn't have lemon juice, so I seasoned the fish with lemon pepper seasoning. I would just recommend not putting too much of the topping on the fish. Just a thin layer is enough.

Amish Breakfast Casserole

Reviewed: Oct. 1, 2011
This was very good. I halfed the recipe, but used 4 eggs instead of three. Next time I might even use 5 as mine didn't end up very "eggy" and since it's for breakfast I would have liked the eggs to be more significant. I also did not thaw the hashbrowns first, so I added 10 minutes to the cooking time and it came out perfect.

Flank Steak with Horseradish Sauce

Reviewed: Oct. 25, 2011
This was very flavorful! The only thing I didn't like was that the mustard was a very strong flavor. Next time I would reduce the mustard in the marinade to about 1 tablespoon. The horseradish sauce was super tasty, I added a little extra horseradish for my taste. I put the steak slices on an english muffin with the sauce and it was great!!

Ruth's Grandma's Pie Crust

Reviewed: Nov. 24, 2011
Turned out great for me! I made this with Grandma Ople's Apple pie recipe from this site and it turned out better than I could have imagined. I have some dough left over, not quite enough for another full pie, but I was thinking I might make some turkey pot pies with the leftover thanksgiving turkey and use the leftover dough! I will be using this recipe again!

The World's Best Turkey

Reviewed: Nov. 25, 2011
This recipe was ok. I had an 11.8 lb turkey and I only needed to cook it for about 2 hours. I even turned down the oven to 325. I ended up leaving it in for a bout 2.5 hours, so I think it over cooked a bit, which may have been why mine wasn't as juicy as others mentioned. Overall it was good, and the champagne and drippings made a good gravy, but I couldn't give this one 5 stars because the flavor was about average and the cooking time was too high and long.

Grandma Ople's Apple Pie

Reviewed: Nov. 26, 2011
AMAZING! This was the first time I've ever made a pie and it turned out nearly perfect. I made this with Ruth's Grandma's pie crust from this site. The only thing I did differently was pour about half of the liquid into the apples and then poured the rest on top of the pie. I also used an eggwash on the edges of the pie not touched by the liquid. I baked mine a little too long and the apples came out a little mushy, but that was my fault. Next time I will follow the cook times exactly as stated in the recipe. I will definately be using this recipe many times in the future!

Lentil Soup

Reviewed: Dec. 4, 2011
This was yummmmoo! I made this with only a few changes. I used a 28oz can of tomatoes and a 1 lb bag of lentis. Sauteed some bacon in the pot before hand and used the bacon grease instead of the oil. I added extra chicken broth to account for the additional lentils and used kale instead of spinach. I also added a tsp of cumin and a tsp of curry. Topped with bacon and parmesan cheese. I gave it four stars because I think if it were prepared as written it would have been pretty bland, but with a few alterations to suit my own tastes it was wonderful! This made a ton of soup and I can't wait to eat the leftovers this week!

Sugared Asparagus

Reviewed: Dec. 13, 2011
I was pleasently suprised by this recipe. I was a little hesitant about adding brown sugar to asparagus, but it was great! My only recommendation is that you really don't need much chicken stock. I sauteed the asparagus in the butter/sugar mix for a while and then just added a little chicken stock, probably too much because it took a long time to cook down. I like my asparagus crisp, so next time I will probably only add 2 or 3 tablespoons of the stock, and just cook for a couple minutes.

Mustard Chicken

Reviewed: Dec. 13, 2011
Very Very Yummy! I used a mix of dijon mustard and honey on the chicken. I crushed up th onions as much as possible, and I didn't really have a problem with them sticking. I also used chicken legs and broke them into thighs and drumsticks and baked on a baking rack for about 50 mins. This came out much tastier than any breaded chicken I've ever had!!

Pork Roast with Sauerkraut and Kielbasa

Reviewed: Jan. 1, 2012
Excellent recipe, but I think the cooking time is a little off for the Kielbasa. You can add the kielbasa right at the end, maybe the last hour, just to heat through. There's no need to cook it the entire time if you get the precooked kind, and if you do it'll end up like mush. I subed the roast for some pork chops just becase they don't need to cook as long and there were only 2 of us eating this. I seared them and then added them with the kielbasa near the end. I also threw in a box of frozen perogies when there was about 30 mins left of cook time. Served the kielbasa and pork on sandwichs with sauerkraut and perogies on the side...YUM!

Mama's Italian Wedding Soup

Reviewed: Jan. 5, 2012
This soup was excellent! I browned the meatballs in the empty pot before putting any of the other ingredients in so that I could use the drippings for extra flavor. I also added some garlic to the meatballs. My recommendation to anyone making this soup is to make sure you don't use low sodium broth. Since the flavors of this soup are so mild, you really need a more flavorful broth for flavor. I think a low sodium broth would make this very bland. I will be making this soup again!

Chicken with Lemon Sauce

Reviewed: Jan. 18, 2012
This was an excellent recipe. I had 3 chicken breasts, so I increased the amount of everything a little but otherwise followed the recipe exactly. I was reallly hesitant about the sauce becuase I wasn't sure about the apple juice, but I actually LOVED the sauce. You can barely taste the apple in the sauce, it just adds a nice sweetness. When I make this again (and I will be making this again) I might cook up some bacon to crumble over the top for garnish. Thanks for sharing! :)

Juicy Roasted Chicken

Reviewed: Feb. 23, 2012
Delicious! The only change I made was add a bulb of garlic to the celery. I also flip the bird breast side down once it's done roasting to allow the juices from the dark meat to move into the breasts. I will use this recipe again!

Chicken Marsala Florentine

Reviewed: Mar. 17, 2012
The flavors in this were great! I changed it up a bit and used all the ingredients in a pasta dish. Instead of using chicken breasts I used frozen chicken tenders and cut them up into pieces and added them to the sauce at the end. I also added onions, garlic and chicken stock to make it a little more saucy. I also added more spinach and tossed all the ingredients with whole wheat pasta...will make again!

Tilapia Scampi

Reviewed: May 10, 2012
This was great! I added lime juice instead of lemon, and probably used more than 11/2tsp. I didn't have any parsley, but added a few halfed cherry tomatoes. I also added a few shrimp close to the end of the cooking time. I will be making this again!

London Broil for the Slow Cooker

Reviewed: May 10, 2012
This was very good. I added red wine to the mushroom soup and I think this would have been bland without it. I also threw half an onion and 3 sliced carrots into the pot before putting the meat in. When the meat was done cooking I removed it from the crock pot and added some half and half to the gravy and turned the pot up to high for about 10 minutes. The addition of the wine and the half and half made a great gravy! I gave this 4 stars because I think it would have been bland without some tweaking, but over all its a good start!

Easy Mexican Casserole

Reviewed: Aug. 3, 2012
This was a great dish! I followed the recipe exactly with a few additions. I added taco seasoning to beef and cilantro to the sour cream. I added some frozen corn to the beef and beans as well. Lastly, I chopped some extra cilantro, green onion and tomato as garnish along with some avacado...I would definately recommend adding a little avacado as garnish! Will make again!!
