Very Old Meatloaf Recipe

Reviewed: Nov. 12, 2013
Very good. I used ground Turkey because i thought that would compliment the apple and just added some salt and pepper to taste. A winner for everyone.

Jennie's Heavenly Slow Cooker Chicken

Reviewed: Aug. 24, 2013
So good, but... it was salty. I think with the cream cheese, canned mushroom soup, and Italian salad dressing mix it just sent the sodium through the roof. Since they don't have the golden mushroom soup in low sodium I am going to try it with regular cream of mushroom soup but use the low sodium kind. But the flavors are wonderful. I served it over linguini with steamed green beans from the garden.

Creamy Horseradish Garlic Spread

Reviewed: Jun. 11, 2013
Wow! This stuff is great. I'm still looking for new things to try this on. We had it on roast beef sandwiches first and it was wonderful. We have since dipped chips, veggies, and beef kabobs in it. We haven't found anything that this does not taste good on. The second time I made it I used the extra hot horseradish and I thought it really just put it over the top.

German Apple Cake I

Reviewed: Apr. 14, 2013
I made this cake in a bunt pan. I followed the recipe except one small change. I rand out of white flour so I had to use 1 C. white and 1 C. whole wheat flour. But wow this cake was so amazing and I'm really glad I didn't pour a glaze over it or frost it. Does not need it at all. My only complaint is I didn't really taste the cinnamon that well and there is A LOT of sugar in it. Might tweak the recipe a bit next time. Thanks for sharing!

Lentil Soup

Reviewed: Jan. 22, 2013
Hearty, Yummy. The wine and paprika really gives the flavor extra depth. Served it with crusty bread and a side salad. I served it when I had my Mom and Brother over for dinner one night. Everyone, even the kids loved it. Sent my Mom and Bro home with leftovers. Kids have already requested it again.

Chunky Monkey Pancakes

Reviewed: Sep. 15, 2012
I huge hit with the kids. I'm glad this recipe was in my inbox this morning because I was drawing a blank this morning when the kids were asking for breakfast. Served it with bacon on the side and even my banana hating daughter ate them faster the I could get them off the griddle. My son also made bacon "tacos" with them and they were so good he and I decided to add bacon right in them next time. Thanks for saving my morning!

Moist Garlic Roasted Chicken

Reviewed: Aug. 27, 2012
A WINNER! I made this last night for dinner. There was nothing left. I usually try a recipe the first time as is and then make chages to our liking after but I had to use what I had on hand. The only changes I made were: I had a already cut up whole chicken in the fridge so I used that. Instead of stuffing the chicken I just seasoned the peices with salt and pepper and then put the slices of lemons and garlic underneath and on top. Then I had to use dried thyme because the stuff I bought was bad and just sprinkled it on top of the chicken. But I still wrapped it and cooked it and unwrapped it the last 20 minutes like others suggested. These changes did no matter. The flavors were there and they were excellent. This will become my go to roasted chicken recipe. The kids loved it! Thank you for sharing.

Peach Pork Picante

Reviewed: Jun. 6, 2012
I made this exactly as printed and my family and I thought it was really good. I served it over rice and black beans. I only gave it 4 stars because I would like to know what kind of salsa was used(like an example of a brand). I ended up using a peach-pineapple salsa because the peach jam I found (and only one store carried it) didn't have any flavor. I'm going to have to go to a local fruit orchard and get some REAL peach preserves and try this again. But it was SO quick and easy. Once I find the right brand of salsa and preserves, we will be eating this alot more often. And I saw some people not give this very good reviews because it was too spicy but I used a mild taco seasoning and a mild salsa. It had no bite to it at all, in fact is wasn't spicy enough for me so I chopped up some jalapeno and sprinkled it on top of mine so my kids could have mild and I could have spicy. Thanks for a quick and filling meal!

Quinoa with Chicken, Asparagus and Red Peppers

Reviewed: Mar. 30, 2012
Im only giving it 3 stars because it was bland for my taste but has lots of potential. The second time I made it I changed a few things. I sauteed a small chopped onion, dash of red pepper flakes and 2 minced garlic cloves until translucent. Then added the chicken, salt, pepper, a dash or two of dried oregano and basil. This really upped the flavor without adding a ton of calories and turned it into a 5 star dish. Yum, yum. Thanks for sharing.

Broccoli With Lemon Almond Butter

Reviewed: Jan. 22, 2012
I only gave it 4 because I did a few things different. First thing I did was I lightly roasted the almonds in a pan until fragrant. And I used less lemon juice and a bit more lemon zest. This was so good, light tasting, even with the butter and very refreshing. Thank you for sharing. I recommend toasting the almonds.

Vegetable Chicken Soup

Reviewed: Nov. 22, 2011
this soup was great. I did add some fresh parsley because I had it and decided "what the heck". But other then that I stuck to the recipe. I was hesitant to add the picante sauce but I'm glad I did. and it wasn't spicy at all. Thank you for a great low fat soup Betty

Turkey and Yam Spicy Tacos

Reviewed: Nov. 11, 2011
This is going in the regular dinner rotation. So easy to make and so delicious. I did have to make 2 changes. I used serrano peppers instead of jalapenos so the kids would eat it but then just served fresh jalapenos on top of the adults. I also added more then a cup of salsa verde. More like 1 3/4 C. Served them up with some mexican queso fresco cheese, sour cream, shredded cabbage, and avocado. There were no leftovers and the kids are still talking about them.

Chicken In Basil Cream

Reviewed: Oct. 30, 2011
Oh the under rated pimiento. That is what caught my eye about this recipe. Delicious! Made it for my Italian side of the family and they raved for something different. The only modifications I made were, I used a dry 4 cheese blend instead of just parm because that's all I had and I added a little garlic to that sauce because we are garlic lovers. I took other peoples advice and doubled the sauce and served it over a mini farfalle pasta. No leftovers and I will be making this again for sure.

Kids Favorite Meatloaf

Other then using fresh garlic and onion i didn't change much. I also used a cupcake pan lined with plastic wrap to form mini meatloaf's and then turned them out onto a pan with a rack so the fat dripped off. WOW!! My 6 year old son ate 2. They were so good. and the wheat chex mix worked out wonderful. This one is a keeper. Thanks so much.

Mushroom Stuffed Zucchini

Reviewed: Oct. 11, 2011
THIS IS SO GREAT!!! I love zucchini and I swear this is the best I ever had. I'm glad I didn't add sausage, it didn't need it. The only changes I made was I used a 4 cheese Italian mix instead of Mont Jack cause that's all I had on hand. And I added some black pepper to the mixture. SOOOO GOOD. Even the kids loved it! Thanks for the new family favorite.
