Slow Cooker Pulled Pork

Since I do not like nor drink root beer, the only substitution I made was pouring a can of Natural Light beer over the pork tenderloin. I've tried a couple different flavors of Kraft's barbecue sauce. My favorite is the Chargrill flavor poured over and mixed with the shredded pork. Absolutely delicious! You will not find an easier barbecued pulled pork recipe, and it's only 3 ingredients!

Slow Cooker Chicken Taco Soup

This is a delicious hearty soup on a cold winter day! Here is a tip for anyone who interested in making this soup that may be wondering how much chicken to buy: The package of skinless boneless chicken breasts I bought weighed around 2.3 lbs., which was plenty. When I made this soup, it yielded approximately 8 quarts. I had plenty left over to put in the freezer!

Country Scalloped Potatoes

I made this dish last Christmas for a family get-together. It was a big hit and a few cousins asked for this recipe. I substituted the chicken gravy with a can of Campbell's Cream of Chicken Soup. Also, I didn't put as much diced ham as the recipe calls for. I only added an 8oz. package and it was good.

Salmon Patties II

I have made these salmon patties several times and they are delicious! The only variation I have made to this recipe is I sprinkle some fresh ground black pepper on each patty as they are frying in the pan. If you are cooking for one, the leftover patties freeze very nicely in a ziplok freezer bag and they thaw out in no time at all. I reheat them in my toaster oven as I'm cooking tater tots as a side dish.

Broccoli Hamburger Casserole

I made this casserole for a family get-together dinner a while ago and it was a big hit. The only variation from the recipe I made was omitting the mushrooms as I am allergic. I had some of this dish left over, so I froze what was remaining in individual containers. This casserole freezes, thaws, and reheats very well!

Ice Cream Sandwich Dessert

I made this dessert for an Independence Day cookout at my aunt and uncle's house. It was a huge hit! There were 3 other desserts on the table, and mine was everyone's favorite. I assembled this dessert in a Corning Ware 13"X9" dish, which isn't exactly square as the sides of the dish are at an angle. I wasn't counting the ice cream sandwiches as I was assembling the dessert because ice cream sandwiches melt rather quickly! When I looked in the 24 ct. box of ice cream sandwiches, I had 6 left over, so I didn't use 22 ice cream sandwiches as the recipe stated. Oh, well! The next time I make this I will try cutting 4 ice cream sandwiches in fourths in an attempt to completely fill up the bottom of the dish. **Helpful hint: For those of you who have a side-by-side refrigerator, the freezer side is very narrow. I think my Kenmore has 22 cubic ft. of storage capacity. I had to empty a shelf in order to put this dessert in the freezer. The dish WILL NOT sit flat on a shelf, so it will have to sit at an angle. After 30 minutes, I took the dish out and turned it around so everything wouldn't slide out the side. I rotated my dish at least twice before it actually began to freeze/set.
