Baked Eggplant Parmesan

Since the eggplant got a little (too) soft for my liking while baking, next time I might fry the breaded eggplant in a bit of olive oil prior to baking it. Also, the recipe calls for a lot of cheese -- if you are trying to watch calories, it could easily do with 10-12 oz. of mozzarella instead of 16 oz. It was very tasty and pretty simple especially because it calls for all ingredients found in typical kitchens.

Eggplant Pizzas

I followed the advice of other reviewers and floured, egged than dipped in breadcrumbs, which gave it a nice texture. I'd definitely make this recipe again because it is so adaptable to what you have in the fridge, simple and tasty!

Simple Turkey Chili

I think this is a good starting recipe but could be improved upon with more beans and a little water. It would be perfect for someone who didn't want a lot of spice or depth of flavors but if you want heat, you'll have to add additional spices.

California Grilled Veggie Sandwich

This recipe is great and allows for so many variations. Both times I've made it I had different vegetables, but it tasted just find. Use whatever you have in the fridge. The must in this recipe is good bread from the bakery! Without the good flavorful bread, the sandwich definitely wouldn't taste as good.

Easy Fried Eggplant

I definitely agree with those that say it's too plain. I used plain bread crumbs, but added quite a bit of Italian seasoning to the mixture. Also, I had another bowl for parmeson cheese. The ones dipped in breadcrumbs and parmesan cheese were the favorites.

Mom's Zucchini Bread

This recipe is great! It's very moist and flavorful. I added a bit more cinnamon, which gave it a really good flavor. Also, I cut the recipe in half, and it worked out great.
