Shrimp Scampi Bake

This is so good!! Used frozen raw peeled & deveined shrimp 31-40 ct. But why would you want to leave the tails attached, there is nothing sexy about putting a shrimp in your mouth with a fork and having to pull the tail away with your fingers. I removed the tails before cooking, followed the recipe exactly except for the fresh parsley. I probably used 4 times the parsley. Oven time was about 10 min. Made penne pasta for the 6 servings, mixed together and added some grating cheese and a little more fresh parsley. Served with some french bread and a glass of wine. Honey & I were very happy.

Awesome Slow Cooker Pot Roast

Have made this several times following the recipe, but also trying some of the suggestions in the reviews. This last time I coated the roast in flour, S&P, & garlic powder then browned for a few min all around. Into the crock I used low sodium beef broth instead of water, making sure the meat was covered by the mixture. Added 1/2# peeled boiling onion and turned on high for what was supposed to be the 1st hr, after 3 hrs I noticed we were still on high, turned down to low and added a small bag of baby carrots, supper was still 5 hours away, so after 3 hrs on high & 5 hrs on low we were pleasantly surprised to have the most tender pot roast yet with gravy that was top shelf, served with smashed garlic red potatoes & a Red Zinfandell wine.

Penne with Chicken and Asparagus

Very Good, scaled down for 4 servings, added sauteed red pepper, onion & mushroom, added the asparagus to the pan for a few minutes, then added the broth, and continued with the recipe. Bread & Wine made it a complete meal.

Chicken Thigh Fricassee with Mushrooms and Rosemary

While this is edible, it did not make me want to do this again, followed the directions with no changes, used a very good wine and just didn't have the excitement I thought it would have. As an other reviewer said it just isn't worth an hours + wait.

Chicken Marsala

Followed recipe except for adding more mushrooms & used chicken tenderloins, chicken was delicious, but sauce was thin, added a tsp of cornstarch to thicken and left the lid off after turning the chicken in the sauce. Easy and tasty.

Filet Mignon with Rich Balsamic Glaze

Happy Valentines Day, Oh my!!!! This was heaven, I sauteed about a cup each of onions & mushrooms in 1 tbsp each butter, olive oil, & 1 clove garlic when tender moved to a bowl, increased heat and placed steak in pan, turning after 1 min each side, did not cover, and turning again after 4 min each side, added the balsamic/red zinfandael after 8 min, after 10 min total I added the mushroom/ onion mixture to the pan for another 4 min turnin the steaks again, aftern 14 min total removed the steaks to a plate and continued to reduce the onion/mushroom mixture for another 4 min while the steak rested, a perfect warm pink center, and a mushroom/onion, balsamic/zinfandel side dish to drool over. Tapenade

Enjoyed this very much, have made several times with a little change, I use 1-1/2 cups Kalamata Olives, 1-1/2 cups canned black olives (cuts the saltiness), about 1 tbsp of lemon juice and 1 tsp of lemon zest, good dash of black pepper and follow the rest of the ingredients, coarse chop in food processor, slowly adding the Olive Oil till the right consistency, and serve on French bread or crackers. Keeps well. Stir & allow to approach room temp before serving.

Awesome Sausage, Apple and Cranberry Stuffing

Excellant! made this last year and was requested again this year. Used Pep Farm Country Style stuffing about 4 cups, 1# Italian sausage meat, 3 cups of canned Turkey broth, did not use the liver. Baked in a 2 1/2 qt casserole for 35 min at 325. Will be on the table next time also.

Beef and Parmesan Pasta

This was NOT Hamburger Helper, I did change a few items, 1/2 Italian Sausage & 1/2 Ground Beef, I added a large sweet onion sliced, 1 tsp chopped garlic, and to loosen the sauce about a 1/4 cup of red wine, other wise I followed the recipe to the letter. This is superb.

Grandma's Pork Chops in Mushroom Gravy

Very tasty though the pork is dry. I used 3/4" center cut & sirloin chops, the first time as directed, the second cutting the cooking time by 10 min & 5 min, also putting the chops back into the gravy each time while the rest of the dinner finished. I wonder if if the cooking time is still too long?????

BBQ Pork for Sandwiches

Used a 5# bnls cc pork loin roast, left the fat on, it slid off after cooking. put onion on the bottom, covered the meat with broth, added garlic and pork seasoning mix. Cooked on low for 10 hours, shredded very easy. mixed with 3 bottles of KC Masterpiece let sit over night. Reheated the next day in the crockpot, held great all afternoon at a party. Thanks for a great idea.
