Cake in a Mug

This was waaayyy too eggy, and the ingredients list is wrong. To make this, you need 8 eggs and 8 TBS of oil... One serving of cake takes an entire egg, making it a very sweet breakfast food for me.

Cinnamon, Spice and Everything Nice Cookies

These actually came out more like tiny gingersnaps with cinnamon chips in them, but I've had dozens of requests for the recipe. I made them with splenda, and they came out amazing with only 30 calories in each little cookie. Definitely the best choice on the cookie plate. Of course, not if you eat 5 cookies at a time...

Coconut Rum Balls

My mother used to make something similar to these when I was young, but she now has arthritis and can't bake for the holidays. She was so excited to taste these, she thought I found her recipe! (In THAT kitchen?? Not a chance.) Thanks, you made her Christmas! Will definitely make again, especially since they store well for so long, and improve in flavor over time.

Caramel Filled Chocolate Cookies

Everyone loved these, and they were pretty easy to make! I didn't have rolos, so I just used caramels. Still very yummy. Store them in a container with a little chunk of bread and they'll last longer, and they're very yummy heated up just a few seconds in the microwave.

Candy Bar Brownies

These are amazing!! I've never had a chewier brownie - they're chewy without falling apart. I brought them to work and got rave reviews. SO easy to make, and i used fat free sweetened condensed milk to try to make them a tiny bit healthier, and i just used plain caramels and peanut butter cups instead of snickers. i think any candy will work!

Apple Crisp II

SO AMAZING! Humiliating to admit, my husband and I finished this whole thing in one sitting, with a pint of dulce de leche ice cream. I substituted splenda for the white sugar, and used light butter, with no problems.

Cashew Chicken II

Very easy and good. It made 8 servings but we ate them all! I edited by doubling the soy sauce, only used 2 cans of broth, steamed some frozen stir fry vegetables, then added to the sauce, and added red pepper flakes. Served over brown rice.
