Delicious! I also tried using apple sauce instead of butter and they came out great, fluffy and yummy.

One Bowl Buttercream Frosting

Reviewed: Mar. 10, 2012
Awesome! I used dry milk instead of cocoa to make vanilla frosting (as suggested by reviews) and it worked great! Never thought buttercream frosting could be easy...

Almond Toffee Bark

Reviewed: Feb. 15, 2012
Love it! Cooked for 11 min on medium, but next time I will let it get darker... I didn't put almonds on top like the recipe says because I used pink sprinkles to make it festive for Valentine's day, but next time I will put almonds on top for sure, I think it would taste better with them.

Artichoke Spinach Dip

Reviewed: May 24, 2012
Yum! I didn't want it to be too "cheesy" so I only used one cream cheese and one 16oz sour cream. Turned out great!

Banana Pancakes I

Reviewed: May 10, 2012
Best pancakes ever. I used Blue Agave instead of sugar (and less milk to adjust for the liquid) but as long as the bananas are ripe, that's all the sweetness needed. We had fresh strawberries on the side. So good!

Microwave English Muffin Bread

Reviewed: Jan. 8, 2013
Made it for the first time, and my kids loved it - it doesn't have a hard crust like bread machine bread, and at their age (3 & 4) that's a plus. To me - no, it's not as great as home made bread I make in the oven, but then again, if I had time for that, I wouldn't be looking for microwave recipes. It does resemble steamed bread or dumplings as someone else wrote, so it could be used instead of those - way easier to make than steaming! Also, here is what I did with 1400 Watt microwave: To rise: 1 min on 20%, let sit for 10 min, repeat 2 more times To bake: 6 min on 50%

Crustless Pumpkin Pie

Reviewed: Nov. 29, 2011
Love this pumpkin pie! Comes out great every time. I bake it in a glass pie dish, so it looks very presentable without the crust. I only use about 1/2 cup of sugar and extra tbsp pumpkin pie spice mix, but that's a matter of personal preference - we like it spicy and not too sweet. Wonderful with fresh pumpkin in fall, but I make it year round with canned pumpkin puree, because my husband and 3 yo daughter keep asking for it.
