Chocolate Butter Cream II

I made this frosting last night and I did make some very heavy changes. I used 2 cups powdered sugar and 1 cup dark cocoa powder (sifted) with 2 sticks of softened butter and 2/3 cup of shortening. I omitted the milk altogether and I must say it is one of the tastiest butter cream frostings I have ever made! It was very easy to pipe onto yellow cupcakes and then I put them in the refridgerator to help them set. They are rich and chocolatey without being too sweet. I love the dark chocolate color of the frosting as well. Thank so much for posting this recipe!

Iced Pumpkin Cookies

What a cookie! This is a great recipe for those that are just beginning to bake too, I also substituted 1/2 cup of brown sugar for 1/2 a cup of the white sugar and it came out great! I used all-spice since I didn't have all of the other spices and a teaspoon of cinnamon. I also added a little bit more salt (I found the batter was a little bit too sweet) so I added a full teaspoon of salt. I haven't made the glaze yet but am taking the suggestion to add the cinnamon, these would benefit from a tang, and I think a cream cheese frosting would set them off right! They are so delicious and moist! Thanks for sharing.

Cream Cheese Jalapeno Hamburgers

I love this recipe! I did make a few changes. I added two eggs, a packet of liptons onion soup mix and a couple of splashes of worcestershire sauce to the hamburger meat. I then spooned a small amount of the jalapeno cream cheese in the middle and sealed the sides up as best I could. I cooked them on a griddle, browned both sides then placed a glass lid over them to ensure cooking throughout (juices were clear) The cheese didn't leak! I slathered them up in cilantro mayonaise and topped with arugula and spinach. (This is a low carb dieter's dream!) had alot of depth and great flavor, thanks for sharing!
