Best Chocolate Chip Cookies

Delicious!! only used 1/2 amount of white sugar, added 1 mashed banana, 1/2 tsp cream of tartar, 2 tsp espresso powder and sprinkles. To die for!!

Mini Cheesecakes I

These turned out really well. Used grahm cracker crumbs instead of nilla waffers. Only made about 28 mini cheesecakes though, the recipe said 48?

Italian Peas

these turned out well. Was unsure of how 'done' the peas were suppose to be so I cooked until warm and starting to soften but not squishy. was a very cheap side!

Sausage Stuffing

Used 1/2 cornbread and 1/2 white bread crumbs. This is very similar to the stuffing my dads family has been making for years. Added a little cream, and more seasoning.

Pumpkin Oatmeal

Delicious! I always make on the stove. Cook oats in milk or water 3 minutes then add pumpkin puree and spices (cinnamon, nutmeg, cloves, ground ginger) for last two minutes. I also love when mixed with coconut, cranberries, hazelnuts or walnuts. My FAVORITE, healthy, filling breakfast.

Pumpkin Spice Muffins

These turned out wonderful! I did make a few changes: 2 cups pumpkin and only 1 cup apple sauce, no vegetable oil, added 2 teaspoons almond and 2 vanilla extract also added hazlenuts. Made mini muffins. Not a very sweet muffin but very good.

Greek Penne and Chicken

SO easy and really tasty. Used 1 can diced tomatoes instead of the tomato and saved some of the water to help keep pasta from becoming dry. used fresh parsley and oregano. Next time will add mushrooms and olives.

To Die For Blueberry Muffins

AMAZING!!! used buttermilk in place of the milk as suggested by some of the other viewers. I could not get my crumb mixture to seem right so i just put a little on each (honestly, dont feel its needed). SO easy, i have no idea why anyone would make boxed muffins. Also, added about twice the blueberries since i had them on hand, but next time will probably not add the extra.

Chicken Pot Pie III

I made this for my boyfriend, while i did not actually get to try it I am giving it a good rating because it is SO easy. I made it, then froze it without cooking and just left him directions. He thought it was delicious and i liked that he had some 'real' food that was easy for him to just toss in the oven. I added more veggies and less soup (1/4 can cream of celery and 1/4 can cream of mushroom) and also added fresh mushrooms.

Mom's Zucchini Bread

Delicious! substituted in 1 cup whole wheat flour and used about 3.5 cups zucchini, also added a little nutmeg. Made 1 loaf and a few muffins, loaf was done at 46 minutes and muffins at 16.

Zucchini Tomato Pie

Did not have any red tomato's on hand so made with a yellow one. Also did not have a pie pan so i made in a regular square one. Added some garlic as i thought it seemed like it could use some. Very easy and tasty!

Garlic Roasted Summer Squash

SO easy! I'm still learning to cook and currently trying to make simple healthy things, this fit the bill! I think i baked a total of 14 minutes and i thought they turned out perfectly tender. Used less oil than suggested and baked on a tinfoil covered cookie sheet.

Simple Tuna Melts

Great basic Tuna Melt. Used pickles instead of jalapenos as thats what i had on hand and shredded cheese. Great served with fresh tomato slices. Easy to make and healthier than adding lots of mayo.

Morning Glory Muffins

I made quite a few changes, but these muffins turned out great. **changes made: 1/2 cup sugar, 2 eggs and 2egg whites, NO vegetable oil, 1 peach cut up small, 2 bananas (to replace oil), 1 cup grated carrots and 1 cup grated zucchini, 1/2 cup old fashioned oats and 2 tsps wheat germ. Seemed like it took forever to get all the ingredients together but well worth it. Also, i would recommend making sure pineapple is really well drained.
