Whole Wheat Blueberry Pancakes

These were delicious. I followed the recipe but did add 1/2t vanilla & cinnamon. Base on the nutritional info I can gather, these are better than the B-quick Heart Smart mix that I normally use. Pre-diabetic DF raved & would eat again for a special weekend breakfast. Yum! Thick and delicious.

Caramel Pecan Pie

I thought this was awesome! It was the first pecan pie I've ever made. I did use Kraft caramels, and only 34--which was perfect. I will try SF caramel icecream syrup next time as many suggested, but it really worked out perfect as written. I used crushed pecan pieces because that's my preference. Only thought would be to use a deep dish pie crust. While a normal crust is fine (pie inflates, then levels out upon cooling), it was VERY full and I spilled a little getting the pie into the oven. Perhaps that was just my own clumsiness!

Blueberry Oat Cookies

These were fine. They were hard to keep together, but that is just the nature of adding blueberries to cookies. I baked mine for 14 minutes and wish I had baked longer (and my oven normally does not require that). They were still quite moist--almost too much so. But, good flavor, which is what matters!

Soft Oatmeal Cookies

I made these a while ago and they were the best oatmeal cookies I have ever had. I will be making them again soon, but adding chocolate chips. I did chill, but did not flatten with a sugared fork--I just left them in balls. SO good!

Slow Cooker Tomato Chicken

I did what a lot of others did and used this recipe as a jumping off point. I put FROZEN chicken into the crockpot to keep it from over cooking. I did scatter a few dashes of salt, pepper, and garlic powder over the chicken before pouring the soup mixture over it. I did add a can of Campbell's Tomato Soup, as well as some extra garlic. Cooked 7 hours, shredded chicken, and served over pasta. (left the peas out). We LOVED it.

My Grandmother's Best Berry Pie

My fiance and I both loved this! I tweaked it a little, but not enough to be considered "custom." I just used a bag of unsweetened frozen mixed berries, thawed (I did try to dab up significant moisture) and supplemented with a few fresh blueberries. Once it cooled, it was just "ok"--it got really good the next day, after it had chilled. Will definitely make again--so easy!
