Whole Wheat Blueberry Pancakes
These were delicious. I followed the recipe but did add 1/2t vanilla & cinnamon. Base on the nutritional info I can gather, these are better than the B-quick Heart Smart mix that I normally use. Pre-diabetic DF raved & would eat again for a special weekend breakfast. Yum! Thick and delicious.

Caramel Pecan Pie
I thought this was awesome! It was the first pecan pie I've ever made. I did use Kraft caramels, and only 34--which was perfect. I will try SF caramel icecream syrup next time as many suggested, but it really worked out perfect as written. I used crushed pecan pieces because that's my preference. Only thought would be to use a deep dish pie crust. While a normal crust is fine (pie inflates, then levels out upon cooling), it was VERY full and I spilled a little getting the pie into the oven. Perhaps that was just my own clumsiness!

Soft Oatmeal Cookies
I made these a while ago and they were the best oatmeal cookies I have ever had. I will be making them again soon, but adding chocolate chips. I did chill, but did not flatten with a sugared fork--I just left them in balls. SO good!
