Healthier Creamy Rice Pudding

I made this today and LOVED IT. I left out the butter, cut raisins back to 3 T, and also tempered the egg before adding it into the pot so as not to have scrambled egg bits. Also, I used soy milk and cooked brown rice. Per other comments, I cut back on the sugar too. I added 2 Truvia packets instead of sugar, and found the pudding plenty sweet. A dish a cinnamon, and all was fantastic!

Quinoa Salad with Grapefruit, Avocado, and Arugula

Amazing. I rinsed the quinoa well (to remove the bitter taste) and tossed it in a wok to toast. Once toasted, I added the 1-3/4c water directly into the wok (eliminated the draining). Cut the oil in half and left out the avocado and cilantro (I will try it with avocado next time). So, so good!

Grilled Salmon I

Amazing! I only had 2 filets, so I did 2 T each of soy sauce, brown sugar, and water, and 1 T each of olive oil and lemon juice. I sprinkled the filets with garlic powder and pepper. It was awesome. It took 4 minutes for it to cook on the george foreman grill. I may add some ginger next time.

Best Ever Banana Bread

Excellent. I made a few "healthy" changes-- I made the buttermilk by squeezing 1tsp of lemon juice into light vanilla soymilk and letting it sit while I combined the dry ingredients. I substituted oil for applesauce and only put 1 cup of sugar- 1/2 c white and 1/2 cup brown. I also used 1 cup of a,l purpose flour and 3/4 cup of whole wheat. Also added 1 tsp each of vanilla and cinnamon. It was perfect. We have already eaten 1/2 of the loaf, and it's been less than a day!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

So delicious. Per another reviewer's comment, I used a 28oz can of dice tomatoes because I didn't have fresh on hand. I also added some oregano and crushed red pepper flakes. SO good.

Honey Dijon Brussels Sprouts

Very good, but I would recommend rinsing them in cold water after you drain them so they don't get overcooked. Also, make sure you drain them well, otherwise all the sauce gets washed out (we learned this the hard way). Even still, so yummy. I halved the butter and honey, and subbed oregano because I didn't have any dill.

Whole Wheat Blueberry Pancakes

These were amazing. More fluffy than other ww pancake recipes I've made, and so yummy. I accidentally added the wet to dry instead of vice versa, but they still turned out great. I also added 1 tsp vanilla extract and used a mix of half vanilla soymilk, one quarter regular milk, and one quarter water instead of one cup milk.

Spinach Lentil Soup

Yummy! I have made this several times these past few weeks, and love it! I added a few stalks of celery, and really liked the flavor it added. I also added chili powder and cumin to bump up the flavor, and omitted the salt because of the salsa. Definitely a keeper.

Chex® Pumpkin Pie Crunch

So, so good! I added 1 cup of Snyder snap pretzels (the sweet/salty combo is awesome), and 1 cup of raw almonds. I didn't add more of the butter, sugar, or spice to accommodate the extra ingredients, and I think that was the right choice because it would have been overwhelmingly sweet. Everyone loves this, and has requested that I add this into the regular holiday snack rotation :)

Such a simple recipe! I didn't have any Grapenuts, so I did 1 c quick-cooking oats, and 1/2 c rolled oats. I added dried cranberries and chopped up almonds, and it was so yummy. I only added 1 T of sugar, because I was worried they would be too sweet with the dried fruit. I'll likely add the full amount next time, but they were still delicious. The bars definitely taste better after sitting the fridge for a while, so be patient! It's worth the wait!

Southwest Chicken

I had such high hopes for this, but the chicken, beans, everything were so dry! If I tried this again, I would probably chop the chicken up-- maybe even cook it chicken stock and shred it, retaining the stock and adding the beans and corn.

Jen's Heavenly Egg Salad

The flavors in this recipe are great-- I love the lightness the citrus adds to the salad. I'm not a huge fan of really creamy salads though, so I cut the mayo down to 3 T. Per others' suggestions, I cut down the lemon juice too (I actually used lime, but it turned out great!)- about 1-1/2 T. I added 1/4 cup finely diced green bell pepper, and 1 finely diced clove of garlic. If you throw the garlic in the lemon juice, it takes the bite out of the garlic, which is nice. I definitely want to try this again-- maybe I'll use the dressing on chicken, and add some curry and raisins.

Braised Balsamic Chicken

I love balsamic vinegar, but for some reason, this didn't turn out that great. The onions were probably the best part. I followed the recipe exactly, and the chicken turned out dry. I think it would have been better had I chopped up the chicken first. That way, the meat would have been more flavorful. Probably won't be trying this again anytime soon.

Denise's Peanut Chicken

Awesome. I didn't have chunky peanut butter (like many reviewers suggested) so I added 2 tablespoons smooth PB in addition to the cornstarch. Because of this, I didn't add sugar and halved the peanuts. I also added julienned carrots and onions instead of the bell pepper, and stirred in some steamed broccoli at the end. I would say the recipe doesn't quite feed six people- maybe 3 or 4. Serve with brown rice and it's a great meal!

Quinoa and Black Beans

I usually find that quinoa is a bit bland a bitter whenever I make it at home, even if I soak it prior to cooking. However, this recipe is wonderful! Per others' suggestions, I soaked the quinoa before cooking. I did not have stock on hand, so I substituted using water plus 2 tsp chicken bullion. I also doubled the spices. It was great!

Black Bean Hummus

This is amazing! I made it this past weekend and my whole family loved it. It was a bit salty after adding the reserved liquid, so I omitted the additional salt. I finished the hummus by mixing in about 2 tsp olive oil for taste and texture after spooning the hummus into a serving dish. Yum!

Spiral Pasta Salad

So fantastic. I've only had this recipe for a month or so and have made it for lunch, parties, and BBQs. Such a crowd pleaser! I didn't have ground mustard, so I just put about a teaspoon of yellow mustard. I doubled the onions as well as the veggies. I added broccoli (steamed beforehand) as well as grilled chicken. I also made it with whole wheat pasta instead of white-- it makes it healthier and more filling. Don't stress about the perfect ratio of spices--I just eyeball it and the dressing tastes great every time. Thanks!
