Healthier Creamy Rice Pudding
I made this today and LOVED IT. I left out the butter, cut raisins back to 3 T, and also tempered the egg before adding it into the pot so as not to have scrambled egg bits. Also, I used soy milk and cooked brown rice. Per other comments, I cut back on the sugar too. I added 2 Truvia packets instead of sugar, and found the pudding plenty sweet. A dish a cinnamon, and all was fantastic!

Quinoa Salad with Grapefruit, Avocado, and Arugula
Amazing. I rinsed the quinoa well (to remove the bitter taste) and tossed it in a wok to toast. Once toasted, I added the 1-3/4c water directly into the wok (eliminated the draining). Cut the oil in half and left out the avocado and cilantro (I will try it with avocado next time). So, so good!

Grilled Salmon I
Amazing! I only had 2 filets, so I did 2 T each of soy sauce, brown sugar, and water, and 1 T each of olive oil and lemon juice. I sprinkled the filets with garlic powder and pepper. It was awesome. It took 4 minutes for it to cook on the george foreman grill. I may add some ginger next time.
